    It’s an incredibly beautiful garden. If you want to experiment with eggplant, throw the eggplants and some garlic onto a baking tray (with some olive or avocado oil) and put it in the oven on roast at 325• for about 40 minutes or until the egg plants are soft and the skin is puckered. It’s probably best to poke a couple of holes into the eggplants before you roast them. Throw everything in the blender, with some herbs of your choice, and you have a delicious dip. Simple and yummy. I think you once mentioned that you like Thai food. You can spice this in a thai way.

    Lovely garden. Carrot apple juice might be an option for your excess. It’s delicious - 4 carrots 1 apple.

    Laura my dear, there is plenty more you can do with zucchini maybe its stuff you doent hear of in the states.when we have a glut of them a zucchini and choc cake is the bomb and freezes well.then a yummo zucchini slice, which is like a quiche without pastry and also freezes well.then i make thin batons and add to spaghetti sauces, chow mein and other one pot dinners.then we have creamy zucchini and garlic soup.also you can stuff them with a meat and rice mixture.if you have a glut of beets, they make a yum choc and beetroot cake too.if you want recipes from Austraila give me a line. P.s. our 1 year old grandbaby devours zucchini slice, so maybe Benjamin would like it too. Cheers Sandra in oz

    Hello Laura,
    your veggies look great. A little tip maybe for your problem with golfers. I live in Bulgaria in an area where moles are quite widespread. Something I know from my grandmother is that the fritillaria plant bulbs separate aromatic juices that hold moles away. Sometimes it is very inspiring how a plant which seems so delicate can play such a important role in protecting others.
    And thank you and yours family for doing everything with such love!

    wow wonderful job! personally i don't get into vegetable gardening myself (i do do basil & lavender, rosemary, more herbs) BUT i marvel at what you're doing! you def. have the magic touch!

    Hi Laura, I think your second calling is a crop farmer.... All your harvest produce are so successful... You should buy another plot of land and think about boutique farm producer or something....:-))). Could you group all your vegetable gardening videos together in a playlist? So its easier to trace the progress ...? thanks.

      I like that idea of grouping the vegetable gardening together in a playlist!! Would really like to see how your sweet potatoes turned out. We tried some in 2016 and did good so planted more in 2017-about the time we were ready to harvest we notice a pocket gopher hole and since my husband had mulched them VERY heavily they had been devouring our sweet potatoes and we were unaware of it! We got approx. 10lbs and estimate we could easily have had 30+!! We battle those varmints continually!!!

      I was thinking that also. I haven't ever thought of pruning tomato plants except for the suckers that come out of the middle of two branches.

    You’re so lucky to have gardening like this. Even though I’m in a zone 5 we had a really bad year and I didn’t get one tomato make it to maturity.

    Eggplant, slice length or circles. Put in salt water, it takes bitterness out. I use an egg wash, flour, egg wash, panko or regular breadcrums, fry until golden on both sides. Length wise sliced I use for lasagna instead of the pasta.

    Laura and Aaron what and amazing garden you have. We grow a small garden at our great grand children's house .Just to let them see how the vegetables they eat grow.     Eggplant is delicious made sliced(1/2"), egg dipped, breaded, fried and topped with marinara sauce, fresh basil, and mozzarella cheese, and baked for 20-30 minutes at 350*. Like a chicken parm. Also try the sicilian eggplant, much less bitter, more rounded ripply look. Gorgeous too! Love your videos! Thanks!

    Caponata, a Sicilian stewed relish, is a fabulous way to use eggplant. It makes a delicious side dish or appetizer.

    When you cut up the eggplant you can salt it to remove some of the bitterness. You need to wash the salt away afterwards, but this way of preparing eggplant is great for tomato based pasta sauces

      She is very right about being able to add it to tomato based pasta sauces. If you aren't big on chunky eggplant, prepare it as mentioned above and/or roast it and then puree it and add to your sauce. It adds lots of good nutrition and takes on the sauce flavor.

    Your garden is huge! I’d love to know how you go about planning a garden, how you keep track of what you planted, when they were planted and how you care for each individual plant. That seems to be the most overwhelming part of gardening for me.

    You should try planting your corn behind your beans (legumes) then it will be able to take advantage of the nitrogen fixed in the soil by the beans (legumes). Farmers typically plant them this way in 3-way crop rotations of corn/wheat/soybeans but it works the same way in the garden with corn and beans.

    Zucchini (slice) are fantastik fried, add yogurt, vinegar and garlic and you have a delisios meal , you also can bake them if you want more diete version.

    I love how casual you are about your gardening. Like, I just grabbed some seeds from what was left at the garden center and threw them in. LOL.     Gopher traps works best for us. They hit your yard hard in the spring and then again in the fall. Stay on top of them and they wont move around over the entire yard. As new gophers move onto your property, they seem to re use the same tunnels year after year and then spread out to new areas. Once the tunnel is used, they will work that area again come nest year.

    I love eggplant you can grill it with a lot of oil, it is great in stews, you can make baba ganoush, and some really interesting tomato sauces. It is really good just added into stuff. Its kinda like a sponge so to eat it alone you have to give it a lot of oil, but if its is incorporated into other dishes it almost acts like a spice.

    Eggplant is very good grilled with some olive oil and mashed garlic. Cut it longitudinal and add to salads or add some goats cheese and make a salad.

    I am so jealous, lol here in Montana I cannot keep the deer out of my gardens. They eat everything but my lavendar. I bought some deer resistant plants last year they ate everyone of them. Loved this video and thanks for sharing your knowledge . You are a natural in front of the camera and hubby is great with the camera. So glad i found you. Carole

      I have to have an 8 foot fence around my garden and if the Elk come through forget it. They push the fence in halfway through and strip everything....except a lowly Thai hot pepper. They only ate half of that plant!!! I would have loved to see the expression on his/her face when they stripped one side got a taste and didn't go back for the rest!

    We've had very good results using vermicompost tea sprayed liberally on our dahlias to deal with spider mites. Might be worth a shot! Lovely garden and video, thank you!

    I love it when zucchini gets that big and you can use it for so much more than bread! Such as a zucchini and tomato dish and a zucchini 'pizza' pie which are all hot dishes!

    I love all your videos! You and Aaron are such a busy couple...always having new plans for the gardens... this gives us more ideas and great videos!
    Scratches on a watermelon are supposed to be from an animal wanting to eat the sweet fruit...that is what my Mother-in-law learned from a watermelon farmer!
    Also, I have read that spiders hate peppermint...making a spray with peppermint essential oil is supposed to make them vacate. I personally have not tried this...but they say it works!

    Arron and Laura...not sure if you’ve ever mentioned this but a use styrofoam in my large pots and in tall raised bed. It works as insulation for plants, reduces the amount of potting soil, and saves money. It also reduces the weight of pots should you decide you want to move them and your recycling ☺️😊

    Hi Laura. I’m a new subscriber to your channel. I’ve enjoyed all your videos thus far, you’re a great inspiration to, not only myself, but my husband and kids as well, we all enjoy you and your family. As I was watching your fall garden tour, you picked up this somewhat big zucchini, I use them as a pizza base; scrape out the seeds, fill it with pizza toppings; bake and enjoy. ( you might want to bake the zucchini for 20 minutes before adding toppings😋).

    Recepy for eggplant that's really delicious and easy to make. Bake them on the BBQ grill to get them cooked for about 20-30 minutes. Let the skin burn a bit. Turn at various intervals. When they are cooked put on a tray, cut open in half. Sprinkle olive oil, pepper, black sea salt, and oreagano over it. Then cut into smaller pieces and mix it all. You will love it. 😊

    Bravo, nothing better than a functional beautiful garden. Too bad you don’t have chickens to feed the jumbo sized zucchini’s to. Always glad to see monoculture lawn grass go to the compost pile.
