Thanks for sharing your experience I made my own coconut milk yesterday and it was really delicious, for the coconut flesh i baked it in the oven 170F for 4 hours(after dry) then 200F for 2hours. it was perfect shredded coconut Love From 🇸🇦

There's traditional South Indian tamilian food called aapam. Like sourpancake with coconut and sugar (natural). South Indian can't live without rice and coconut

Those brown coconuts are not fresh, they are old, maybe 6 - 12 month to get to that stage. Fresh ones are green and large, yet to be deskinned and have thinner soft jelly meat.
