Marhaba Dalia! I just discovered your site. Great video. I have been looking for a recipe that is as close as possible to the Koussa that my friend from Damascus used to make and I think that yours is as close as I will find. For some reason, though, I think I remember her adding Saffron to the stuffing. Does that sound strange? I mean, have you heard of people adding saffron to their koussa? Of course, I wouldn't mind doing without it since it costs more than GOLD per ounce! :-). I so miss her Mujadara. She also made this really fantastic spinach recipe with garlic and carmelized onions. I have yet to find the recipe for that anywhere. I still have a bottle of Pomegranate molasses in my frig and can't remember what she used that for (LOL!). Like I said, best food in the world! Anyway, I just wanted to thank you for the recipe and video - I am going to make the koussa tonight.

Yes!! And there are waaay too many 'baharat' on the market😔 as it simply means 'spices', im never sure what to pick! Some are awful!
@@amala1874 I have an excellent recipe for khaleeji baharat that a Saudi lady gave me. I can post that it works with GCC dishes, not sure it would go with this as it is a little bitter from the lomi aswad...

I do not have the core thing to take out the inside meat of squash so is there anything else we can use?Also r we able to bake it on microwave?if so what's the temprature and time?
