- Guinness Braised Corned Beef Brisket is a really easy recipe. A corned beef brisket is braised in Irish Guinness Extra Stout and spice, to fork tender perfection. Then made into the best Reuben sandwiches you've ever had, with sauerkraut, Swiss cheese and Russian dressing squeezed and grilled between two pieces of Jewish rye bread. This is a perfect dish and/or sandwich any time of the year, but especially around St. Patrick's Day celebrations and parties! Give it a try and please let me know how you like it!

I love your reviews and recipes. A lot of people underrate the importance of good, delicious food. I'm glad there is an awesome foodie like yourself to help us enjoy our meals.
Whats in your cupboard? Russian Dressing basic.
1 tablespoon finely chopped onion mashed
1 cup mayonnaise
1/4 cup ketchup
4 teaspoons horseradish, or to taste
1 teaspoon hot sauce, preferably Frank's Red Hot Sauce
1 teaspoon Worcestershire sauce
1/4 teaspoon sweet paprika
Fine salt & pepper
mustard powder
Stout, my favorite flavor, i've spent over 20 week long vacations in Vegas, no night is complete without an evening at the Ellis Island casino/brewery, best fresh brewed stout! corned beef in stout must be heavenly!

Still waiting for the caviar segment...please. It is expensive stuff and can be nasty for trial and error...I only had it once and I was shocked beyond all words at how amazing it was! I'm an old school fisherman with power bait and salmon eggs so it was a freaky thing to try...but my oh my was it amazing...I get it now...I truly do. Please, treat your palate and help to educate us poor folks with champagne taste out here! Love ya big guy!

way back when corned beef in the package was .39 @ pound before and after the march festival the romantic interest decided to make the corn beef and cabbage thing without much success.the next year I found a store closing and the stuff was .19 @ # and had a year on the exp date left.I brought home about 20 pounds and hid it in the freezer.for 18 months I found several non traditional was to use the stuff and always had a good inner chuckle when her and guests liked dinner never realizing it was the irish theme beef.one pre internet recipe I used is suprisinly close to your method in this post. thanks wolfy,keep the faith !!

Larry, I saw the video was over 7 minutes, way beyond your usual quickies, and I was afraid it would be over my head. But despite the length, you made these rueben sandwiches look EASY! I thought the pickling spices included with the beef would be all that is needed. But I see where you kicked your corned beef up with plenty of your own super spices. They made my mouth water! Cooking it all in Guinness Extra Stout had to add even more great flavor! Fantastic recipe! Thanks so much!!

But damn those both are fine looking sandwichs ! When i was a young man or teenager my Dad born in Chicago called it Russian Rye . Those both looked beautiful ❤️
I like to grill 3 slices of buttered rye and put the Russian dressing, cheese, and kraut right on the bread as it toasts. I grill the Corned beef separately and build it when everything is ready. Yummy and messy double decker goodness. Reubens are hard to beat.

Holy Irish Snapdragon!! My mind was already blown in the first 15 seconds! This video is Redonkulous.. I haven't even tried the Pepper Stout Beef yet, (which is on my bucket list) and then you come out with this SOB... This is the kind of stuff Instant Pot is good at cooking, in WAY less time. Like, maybe 75-80 minutes.
Make some quick pickles. Skin and slice a cucumber and onion. Add them to a jar of white vinegar, add a pinch of salt and a teaspoon of sugar. Let them cook in the vinegar on the counter while the meat is cooking. They go great on sandwiches, tacos, and just by themselves as a palette cleaner. I'm going to get one of these. I'm debating whether to do this or traditional or smoke it for some pastrami. Love your show!

Great job Larry, I make my own corned beef, pastrami, bacon ect.. I roast mine with a beer after browning too, after st Patrick's day I stock up on sales of corned beef, those I brown and put on rack in pressure cooker with a beer, both until point shreds and point flakey slices🤤, boiling corned beef is overdone lol. Get so much shrinkage lol. Great sauce is thousand island with horseradish mustard and little ketchup Or horseradish sauce and little ketchup.

Oh, Wolfie! My most FAV sandwich in the world, (Xtra cheese, please!) Loved the demo, really, but the rye bread sandwich...kraut next to bread? not sure I'd have done it quite that way. My favorite sandwich! I believe one secret is to squeeze as much juice from the sauerkraut as possible to avoid a soggy sandwich. It is amazing how many restaurants forget that. I think the best kraut I have ever found is from the Claussen pickle folks. Some of the best pickles, too. Found in the grocery's refrigerated case near packaged lunch meats and wieners. I embarrassed myself once 35+ years ago at Izzy Kadetz deli in Cincinnati, forgetting that at that time they were kosher and trying to order a Reuben. Oops!
What part of a reuben would you consider to not be kosher? Beef, sauerkraut, rye bread, swiss cheese, even the pickle all would be kosher if prepared or (butchered) properly.
Jim Beaux being Presbyterian, I’m no authority on Kosher, but my understanding is that mixing meat and dairy, e.g. Swiss cheese on a corned beef sandwich, is verboten. Strict kosher homes have separate dishes for meat and dairy. The very thought of a cheeseburger would be repugnant.

Big Boy serves the Brawny Lad, it comes on an old school brown rye hamburger bun. it would be perfect for this.
Nicely done! The key is that texture of the corned beef. With mine I use coleslaw instead of sauerkraut usually, and I smoke the corned beef like a pork butt, etc. It's a crowd pleaser but I'm going to try it your way next time to compare. +rep

Do you rinse then cook the sauerkraut or use it strait out of the can uncooked?
I love Rubens, deli style corned beef is good but I really prefer my Ruben this way. I put my dressing right on the sauerkraut. Thousand Island dressing with a little bit of prepared horseradish is a good substitute for Russia

I definitely like the Reuben on rye with caraway seeds but it's so hard to find the thicker version of the bread everybody slices it so thin these days
