Making a very traditional dish - Dried fish chutney served with kitchree!

- Drying fish was a good way to preserve the excess fish caught during any given season and then add a punch of flavour by adding just a little bit to the curries or chutney you may be cooking. This was especially true in the early history of Indians in Durban where fish may have been easier to come by than other meat, being next to the Indian Ocean. A very traditional way to cook dried fish is to rehydrate it by soaking in water and then add it to a tomato chutney to be served with kitchree or even hot fresh bread!
Ingredients
200g piece Dried fish, soaked in water and dried
5 med tomatoes, grated
2 tbs tomato sauce
1/4 cup oil
1 med onion, finely sliced
6-8 small cloves garlic
2 green chillies, halved
1 tsp hurdee
1 tsp mixed masala
A handful of curry leaves
1 tsp mustard seed
1 tsp salt - the dried fish also adds salt to the chutney
Additional 1/4 cup oil to fry dried fish
Do watch your salt addition - if you want to remove more salt from the fish, soak in warm water for longer and change the water a few additional times.

Hello sweet Mama 🙏 you and the lovely apron are gorgeous! This salted dry fish was the staple protein back in old Mauritius but nowadays it is more expensive than the fresh fish we called it ( poisson salé) in our local creole language.Savouring a mouthwatering Rougaille (tomato base just the same as your receipe) Poisson Salé brings back memories of old houses made of iron sheets and minimalist lifestyle. Alternatively, Riz Frit Poisson Salé (Salted Fish Fried Rice) the savory and salty fried rice can quickly become an addiction the salted fish is crumbled, then fried until golden brown. Subsequently, it is added to the steamed basmati rice, topped with cooked carrot, mushrooms and cabbages. This dish is topped off with an omelette and finely chopped chives and used to be the rewarding meal at the end of every week. It is a kind of comforting food that would feed many for less, while also making their day. I have just made this last week I also add shredded half ripe mango in mine. Enjoy!👍
Wow its amazing how we are so far apart but still have ties back to some root recipes which I guess goes all the way back to India. The salted fish fried rice sounds like a variation on egg fried rice from China/South East Asia. Such simple ingredients made into a hearty meal I'm sure!

Hi Ma, great video. I haven't cooked this dish in years. I cook this gravy style. I add a little bit of tamarind and a good portion of honey to boost the flavour. If you use natural honey, it's better.

Fish; whether fried, curried, baked or made in biryani, is my all time favourite food. Although the elders in my family loved their dry fish and kitchri, I never ate it because the smell of the dry fish was too overwhelming for me. The elders always remarked that I didn’t know what I was missing out on and the manner in which you prepared it today, makes me regret not having tried it out. Well done on a great and fun-loving cooking channel.
I do however love kitchri made with rice and tomato chutney.

It’s never to late to try I guess. The smell is quite strong and the taste of the fish itself can be strong as well. But it does impart such a lovely flavour to the chutney. Kitchree and plain chutney is also Pranesh’s favourite dish!

@@GaithreeDeviLuckan Mrs Devi thank you I mastered the dry snoek chutney, I made sure the snoek was soaked 3 times, I patted it with dry, then fried it did stick abit but after I lowered my heat completely off I managed to turn it and fry, so I made it really good, when I put it on the table I saw all my aunties going for it so I managed to get a plate for me Mrs Devi I type in details to you, these are my aunties and if they complimented me then you must know it was good, so thank you for teaching me this art of cooking, I appreciate you so much, that's why my message is detailed,
