    材料 Ingredients:
    一百克梅頭瘦肉切幼粒100g diced pork
    三十克冬菇乾,浸腍切粒 30g dried shiitake mushrooms, soaked and diced
    三十克蝦米;浸腍切粒 30g dried shrimps, soaked and diced
    三個馬蹄,拍鬆切粒 3 water chestnut, diced
    二十克唐芹 20g Chinese celery
    生粉水(兩茶匙生粉加三湯匙清水攪勻)Starch water (2tsp starch in 3tbs water)
    一茶匙金華火腿碎 1tsp chopped Chinese ham
    一湯匙紅蔥頭碎 1tbs chopped shallots
    一湯匙薑米 1tbs chopped ginger
    調味料 Condiments:
    少許胡椒粉 Ground pepper powder
    半茶匙五香粉 1/2tsp five spice powder
    半茶匙鹽1/2tsp salt
    一茶匙麻油 1tsp sesame oil
    生粉水(兩茶匙生粉加三湯匙清水攪勻)Starch water (2tsp starch in 3tbs water)
    一湯匙蠔油 1tbs oyster sauce
    一湯匙紹興酒 1tbs Chinese rice wine
    一茶匙白糖 1tsp sugar
    鹹水角皮材料 Wrapper ingredients:
    五十五克澄粉 55g Wheat starch
    六十毫升清水60ml water
    三十毫升生油 30ml cooking oil
    三百克糯米粉 300g glutinous rice flour
    五十克糖 55g sugar
    一百二十毫升清水 120ml water

    I have tried making it twice and both times, the ham sui gok would explode during frying, i have tested on medium/low heat and at high heat, it would explode both times. Any tips on why this happens ?

    张妈妈:你好,按照你视频的教导,今晚做了约二十个咸水角,好正,自打六十分,谢谢你。
    但有两个问题请导:1:粉皮的粉搓好后,粉皮不粘,会散开的,为什么?是在做澄粉时,是用1OO度的开水来搓吗?
    2:在炸咸水角的过程中,咸水角常常有气爆(好危险),是油温的问题?还是其它问题。请指教,谢谢

      你好👋新春快樂🎉可能你搓的糯米皮較為乾了些,所以黏力不夠,至於炸時常會有爆的聲音,可能皮太簿,內餡熱力將皮迫爆開,所以影片中亦有提醒大家,不要將皮做得太薄,否則就會有這個情況發生,希望下次再做,便要留意這兩點了,謝謝支持!😊👍💕

    Hi Mamacheung I’m sorry can you let me know wheat flour with boiling water then mix it with glutinous flour and add 120ml water to it, its boiling water or cold water because you only say add water I like your recipe thank you

    Hi, I tried it but seems the skin wrapper were very dry and with many cracks on skin when fold, was it lack of something?

      Hi Kathy. Please review my video, pay attention to the episode starting from 2 minutes 40 seconds.I had shown you in details how to prepare the wrapping. Follow it carefully and you won’t fail.

      Maybe not enough water. When you take a ball of dough after mixing and kneading, squeeze thr dough ball and if you see cracks or crack lines in it , it means it is too dry. Now you need to dip your fingers into some water and sprinkle onto dough then knead the dough and take a small piece of dough and form it into a ball and squeeze. If no crack lines then it's good to go. If not repeat with some water again.

      你好!我未試過,因有肉馅要放入雪櫃收藏,最好用保鮮膜包好,否則外皮會被風乾現裂纹,你試試啦!😊

      Judy Wong 你好!可能滾水不夠滾令到澄粉不夠熟,而不夠黏,試試將滚水沖入澄粉攪拌後立即用蓋焗6分鈡,然後才加入糯粉中一齊加水搓成糰,多謝收看😅

    My wife has been cooking for 30 years. She has hard time trying to get the “shell” done right if she follows 100% of the recipe. She is smart enough to “rescue” the “shell” with her cooking experience. I suggest Mama Cheung to re-check the correctness of quantity stated, especially the water quantity. Thank you!

      You are correct. Mixture was so dry, crumbly that I have to keep on adding water to get to that consistency shown in the video
