To make gluten free bhatura, you will need the following ingredients:
    1 cup of rice flour
    1/4 corn Starch
    1 tablespoon flaxseed
    1/4 teaspoon of salt
    1/4 teaspoon of baking powder
    1/4 teaspoon of baking soda
    1/4 cup of plain yogurt
    1/4 cup of warm water
    Oil for frying
To make the dough, follow these steps:
In a large bowl, whisk together the rice flour, corn starch, flaxseed, salt, baking powder, and baking soda.
Add the yogurt and water and mix well to form a smooth and sticky dough. You may need to adjust the amount of water depending on the consistency of your yogurt.
Cover the bowl and let it rest for 15 minutes.
Divide the dough into equal portions and roll them into balls.
Dust your work surface and rolling pin with some rice flour or oil and roll each ball into a thin disc
Heat oil in a deep frying pan over medium-high heat. When the oil is hot, carefully slide one disc into the oil and fry for a few seconds, until it puffs up. Flip it over and fry for another few seconds, until golden brown on both sides. Drain on paper towels and repeat with the remaining discs.
Your gluten free bhatura are ready to serve! Enjoy them hot with chole, sliced onions, and pickle.

Is Baking powder and soda healthy?

    • @EktasKitchen
      @EktasKitchen  3 месяца назад

Baking powder and baking soda are generally considered safe and healthy when used in food in appropriate amounts. Both are common leavening agents used in baking to help dough rise and create a light, fluffy texture in baked goods.
      ### Baking Soda (Sodium Bicarbonate)
      - **Composition:** Pure sodium bicarbonate.
      - **Use:** Often used in recipes that include acidic ingredients like yogurt, lemon juice, or vinegar.
      - **Health Considerations:** In small amounts, it is safe for consumption. Excessive use can lead to high sodium intake, which may affect blood pressure and cardiovascular health.
      ### Baking Powder
      - **Composition:** A mixture of sodium bicarbonate, an acid (usually cream of tartar), and a moisture-absorbing agent (like cornstarch).
      - **Use:** Used in recipes that do not contain acidic ingredients, as it contains its own acid.
      - **Health Considerations:** Similarly, in small amounts, it is safe. Some baking powders contain aluminum, which has raised concerns for some people, although research has not conclusively shown harm from the amounts used in baking.
      ### General Health Tips
      - **Moderation:** Like many food ingredients, these are best consumed in moderation.
      - **Balanced Diet:** Ensure you maintain a balanced diet rich in fruits, vegetables, whole grains, and lean proteins.
      - **Allergies/Sensitivities:** If you have specific allergies or sensitivities, check labels to avoid reactions.
In summary, baking powder and baking soda are safe and commonly used ingredients in cooking and baking. Their health impact is minimal when used in typical amounts in recipes.

    yogurt k alternative hai koi?

    • @EktasKitchen
      @EktasKitchen  2 месяца назад

Yes, there are several alternatives to yogurt for making gluten-free bhature. You can use these substitutes based on dietary preferences and availability:
      1. **Dairy-Free Yogurt**: Use coconut milk yogurt, almond milk yogurt, or soy yogurt as a direct substitute for regular yogurt. These options will provide similar texture and moisture.
      2. **Buttermilk**: A mixture of dairy-free milk (like almond, soy, or coconut milk) with a tablespoon of lemon juice or vinegar can mimic the acidity and moisture of yogurt. Let it sit for a few minutes before using.
      3. **Silken Tofu**: Blend silken tofu until smooth to replace yogurt. This works well for adding moisture and a bit of protein.
      4. **Mashed Potatoes**: Use mashed potatoes for a unique texture and flavor. They provide moisture and help with binding.
      5. **Pumpkin Puree or Applesauce**: These can add moisture and a slight sweetness, which can be balanced with spices or additional salt.
When substituting, ensure the consistency is similar to yogurt to maintain the right texture for the bhature dough. Adjust the liquid content as necessary to achieve the desired dough consistency.
