This recipe was born in terribly hard times and has become a part of some of the greatest celebrations in our family. It is an incredibly rich, moist, soft chocolate cake that is welcome at the most joyous occasions and will ease those hard times. This is a recipe that you really must try.
Jo’s cake uses basic ingredients that most of us already have in our kitchens. There is nothing expensive or hard to find in it. This would be the perfect end to a Sunday dinner or any holiday feast. If you are looking for something different to take to your next church dinner or potluck you have found it.

Ingredients:
1 ½ - 2 cups Sugar
1cup Milk
1 cup Oil
1 cup Coffee
1 cup Cocoa
3 Eggs
2 teaspoon Baking Powder

2 cups Flour
2 teaspoon Baking Soda
Bake in 3 - 8 x 8 pan or 24+ cup cakes
1- 9 x 13 pan or 3 - 9 inch round pans

Holding the baking powder until the end works because baking powder is activated by both moisture and heat. If it contacts the wet ingredients as soon as you add them it will start to work and produce gas, which you’ll beat out while you mix. If you add it at the end it doesn’t get as much mixing and should produce a lighter cake. Nice recipe!
That’s just what I was going to say. My grandmother taught me that when making pancakes. Too much mixing and you’ll “beat the air out of it” leaving you with flatter tough pancakes.

Oh hallelujah, I have a quite elderly friend who has been telling me for YEARS about an old family recipe for chocolate cake made with coffee that was the best in the world and she so mourned the loss of the recipe. This sounds just like what she has described (to the best of her memory). I am going to make this for her for Thanksgiving and see if it’s how she remembers it. Thank you so much. Years ago when the Fukushima earthquake happened and caused the tsunami I was living in Maui. Friend and I were out dancing and the alarms started going off and news flashes across the TVs and evacuate to higher ground. I invited those who were with me to my house up higher and said I'm making a cake who ever wants some.
Same cake...it seemed to calm those who were anxious down. Delicious and when the immediate threat surpassed they left with smiles. Chocolate cake can fix an array of things. 👏👍🙏

I worked in Phillipsburg. NJ for most of my nursing career, lived on the Delaware all my life, and remember my mom telling me about that flood. I lived through quite a few floods myself. And thank you for the baking tip, my mom taught me that when I first started baking and it really does make a difference!

I lived on the Border of Phillipsburg NJ, in Easton PA for many years before moving to the Poconos. In 2007 we had a huge flood, the Forks of Delaware, where the Delaware and the Lehigh River converges were churning powerfully. Downtown Easton, along 611, the banks of the rivers overflowed so bad that we were going catfishing in the Larry Holmes Ringside Restaurant parking lot uphill and across the street from the River itself. The water was so muddy from the flood, that the catfish were loving it. My son caught a huge catfish that parking lot. Many eople were using boats to get around . We kept our wits about us, our home was uphill and not touched by the flood. Hearing you mention the place where we lived, and still visit because it's only 20 minutes south of whete we moved to was pretty neat. Your story about swimming to get the cake from the kitchen sounds like something we would do too. The cake looks so good, and that frosting looks so yummy. I'll be making it soon. I hope you do! I don't bake much and won't need vanilla anytime soon, but will donate to that kid's nonprofit. I will always support those who see a need in their community and work to fix it, never more so than when it's a young person.

My Nana was from Paris Tennessee and we had tons of green beans in our garden this year so when my husband asked me what we were going to do with them I suggested a recipe my Nana made when I was a little girl. I saw your video with the same ingredients and I laughed green beans and bacon ❤ my husband was hooked and I subscribed to your channel. Going to have to try this cake recipe .

Phillipsburg,NJ - know that area really well! They've had many floods - the Mc Donald's was under water in Easton at one time. It's changed a lot - miss that area - my family is all in that area now.

I always cut the sugar down to a couple of Tbles.!! Always works out for me. I do this for cookies, brownies, ect!!
