Here is that fantastic recipe that I hinted at in my last video - Rainbow Bagels
I think they are such fun and as I don't live in New York, where you can buy them, I decided it would be fun to make them at home.
I love a big bagel but you can make them smaller, of course, and then you will have lots more too!!

You will Need
900g / 2lb of Strong Bread Flour
625ml / 2.5 cups Water
2 teaspoons of Salt
4 teaspoons of Dried Yeast
6 different Food Colour Gels
To boil the Bagels
Enough Water to have at least 2 inches / 5 cm in the base of a pan
2 teaspoons of Salt
Cooking Temperature 190C / 375F for 20 minutes

Hi Steve, just watched this with my daughter. she really wants to make them. when we saw how big they were she started singing "I like big bagels and I can not lie!" you then made the comment that you like big bagels, she said see momma He agrees with me. Remember get the silky dough texture so the bagels bake smooth and unlike other bagels, no sugar otherwise it ruins the colours and you can fill them with sweet goodness :o)

Made these for my daughters 18th and they were incredible! Thank you for the super easy instructions. They delivered that “wow!” factor and taste/texture was superb. Soft, chewy and devoured by all. Looking forward to watching more of your videos. Thanks again!

Ohhh, NY bagels. Chewy heaven. I love, love the salt ones. Some cream cheese and a few lox. Your the Elton John of cooking! You are so awesome! Huge fan of your work. Can rainbow cupcakes be made? I'm betting yes.

+EZGlutenFree Thanks Anne, I have been working on them for a while. I've found a few things that make them work really well. If the dough is too wet the surface pits and the dough colours don't join so well. All the Recipes I had seen were making mistakes which I, being a stupid perfectionist, wanted to make good. Though theses are a traditional Bagel in many ways there are some subtle differences that make them work. Hope you spotted them, I am so sorry you can't enjoy these ones Anne, I really love chewy Bagels and I know you miss that so much, I feel like I'm tormenting you... XX

How about a rainbow smoothie the uses the natural color of the fruits. You can't really get blue because blueberries are actually purple, but should be able to get all the other colors.

+FitAnge S You could for sure Angie, Unfortunately if you sweeten them they lose a lot of their colour, I descovered that you need to make them un sweetened and then add a sweet filling, if you like. They still taste fantastic with no sugar, you wouldn't notice it but the colours pop nicely. So I would make them as is and then add a cinnamon cream cheese for get the best of both worlds :o) That sounds so nice too ;o)

Have you experimented to adding a light flavor to a couple of the colored doughs?
These are amazing! How long did you rise them for? Making them for my son as a surprise :)
+Gbutterfly100 In our current weather they rise within an hour, after you roll them, not long at all but it all depends on the environment, let the dough at least double and tell me how it goes..

+Julie H Well it's interesting you ask, I really just used a regular cream cheese and sprinkled the 100's of 1000's or sprinkles on, it was super tasty ;o) Hope that help, are you going to give these a try.

I don't have time just now, sorry. But it is just Cream Cheese whipped with a tiny amount of Powdered Sugar and then Rainbow sprinkles added..

As a rule sugar will make the dough bake very dark and spoil the colours.

what if i dont have gel food coloring.. how much liquid food coloring would you suggest i use..?
+RabidChannel liquid has the wrong consistency. It'll separate and moisten the dough. I'd find gel.

can you put the dough in the freezer and bake it in a week or 2 if that makes sense?
You can but the Dough will need to be completely bought back and proved before baking.

Hiya Steve... This recipe is my go to..ok now I have a question. Can I make the dough and leave overnight to be cooked the next morning? If I can, how abouts do I keep it? Rolled out and covered or just fridge the dough whole? Thankyou! Love your koren/japan videos...🙂
Yes, you will need to slow the development of the yeast, so keeping the Dough Chilled overnight but then you need to allow time for it to come back to life in the morning.. :o) If you play with cool rooms you can slow the yeast to grow very slowly and be ready to go in the morning but this takes experimenting and time.. :o)

These are beautiful, I'm not sure but I think the NYC bagel has more colors. Is that true?
+Brady Farlow they use more layers (which isn't much harder because they make so many) and then they twist it more so that the colours show better. but that's it.

Liquid is too weak. So the colours will be poor..
