Amazing Fruit Cake - Great for Christmas and VERY forgiving

    This is a Christmas cake (fruit cake) that I've been making for 2 decades! It's really lovely and very forgiving so great for people who don't bake often.

    Note: you'll probably get a little curdling when you add the eggs. DON'T WORRY it's ok and the cake will still turn out :)
    You will need:
    350g self raising flour +25g
    250g butter/margarine (I prefer marg)
    250g soft brown sugar
    5 eggs (250g)
    2-3 tablespoons black treacle
    2-3 tablespoons rum/flavouring (use a spiced or dark rum if using alcohol)
    1 lemon
    3 tablespoons spices such as mixed spice- I have used mixed spice and cinnamon but nutmeg is also great (don't just use nutmeg though)
    300g dried fruit - I have used sultanas, mixed fruit and glacé cherries
    -You'll need baking powder if you don't use self raising flour
    TEMP:You need to bake this cake at a low temperature. If your oven tends to run a little hot, lower the temp by 10-20 degrees. If your cake is browning too quickly, cover the cake in foil. You can bake the cake with the foil one the entire time if need been or just lower the temp.
    Mix it up - go with 2 limes instead of lemon!
    Add different mixed fruit to make it what you want.
    You can even add a few nuts.

    Interesting version of fruit cake. My Mom soaked her fruit for a year. Mine have been soaking for YEARS.I have never seen it done without soaking the fruit. Thanks for showing another way, I just wish you showed it sliced so I could see the texture.

    I bake rum fruit cakes but I soak my fruits and mince them the traditional way but I will try your recipe.Ive never cover my cake with foil for baking- that's a very good tip which I'm going to try for definite.Thanks for sharing.

      I always soak my fruit in Whiskey for 2/3 days before I make my cakes and I also use both the rind and juice of orange and lemon. I make a rich fruit cake

    Almost like my mum's cake. She was Jamaican. Soak fruits in rum n cherry Brandy. When making cake, lime peel in eggs n beat lightly. Also add essence. Start flour, then eggs n alternate. Flour in 3, eggs in 2. Then add fruits until wooden spoon stands up! Add some Browning (burnt sugar n water), then put in lined pans. Bake at 350 for an hour then drop to 250.
    When cake is cool, turn onto foil n soak. Then wrap completely in foil n put on plate. Can use cake pan to cover after washing.
    Maybe u can try this recipe. The quantities are about the same as yours but more fruit. Add some prunes.

    Ta! Thought it looked like Mollasses. Looks like what we call Black Strap Mollasses. (States.) Thank you for reply! Cake looks wonderful, and Merry Christmas and Happy New Year to you as well!

      Black treacle does have a slightly different flavour to molasses but not enough to make a difference when used in baking . I used to make a hard brittle candy called "bonfire toffee" every 5th Nov with Tate and Lyle's treacle, I still make it occasionally using molasses but it never seems to get quite as hard or brittle.

    If you don't have treacle, molasses, burnt sugar or browning that you use for gravy or stews is just fine. It's just to get that dark color.

      sekereterra ... needs to age couple weeks to age it, then cut. Keeps nicely for couple months. No treacle? No problem, use blackened sugar or black molasses.

    Spray mine with blackberry Brandy as soon as I get it out the oven and then wrap up in cling wrap and let you have a well flavored cake

      @@karamelkitchen I didnt realise that we in England only know about black treacle, a tip I got from my mum was if you put the spoon in some hot water before you use the treacle it just comes off easy, also if you do that when using a plastic or glass jug the spoon stops the hot ingredients from braking the glass . I jus wish you state an oven temp though. Cant wait to taste mine.

    300g flour, 1tsp baking powder, 1tsp baking soda, 2tsp cinnamon powder, salt, vanilla, 850g mix dried fruit, 200g butter 100g sugar & 3 eggs

    Hi i just saw this. Why do you need to feed the cake, is it because you want it to not go mouldy? Besides rum or alcohol, can we use other types of juices. Thanks!

      I do use the alcohol to preserve the cake so it doesn't go off. I usually use spiced rum or Sherry. You could use brandy too. If you don't use alcohol, I would recommend eating it within a few weeks

      @@karamelkitchen for those that dont or cant have alcohol due to recovering or just dont like alcohol they can use pineapple juice mixed with any other type of juice of fruit and feed it with that. People are smart enough to look it up.
      But any hoo same process to wrap and keep it very air tight . How long shelf life is to this process can also be researched.

      Cutiepaws A Hi, thanks for checking out my video and your kind words 😊. I feed the cake around 50-80ml each time. This year I'm pouring Sherry but lots of people use Brandy or perhaps a darks spiced Rum. Merry Christmas!!! 🎄🎄🎄

      Make it with brown sugar and water or rum to add the rum tho you have to remove the burnt sugar from the burner.

      It’s a by product left over from the refining of sugar. Black treacle is also known as molasses.

      There are a few ways to soak fruits (I don't do it every time but I do often - especially if I'm not making months in advance) If i'm short of time i'll either soak for a few days in run or sherry or i'll heat the alcohol and fruit in a pan over the stove until all of the fruit looks plump and has absorbed most or all of the liquid. :)

      krazo hills Hi, treacle is basically molasses so feel free to substitute molasses for treacle. The light version of treacle is golden syrup. Hope that helps! Happy Holidays!! 🎄

      Short answer - yes!!!!!
      If you don't have time to soak the fruit overnight - put the fruit and juice/alcohol in a pan or the microwave and heat until bubbling then leave to cool naturally 😊😊😊

      Hi. If you tried the recipe, you'd know that there are not too many eggs. I use medium size eggs; if you use large eggs, you would use fewer. Thank you for your comment tho.
