Doing this means the eater could peel the fondant off for the trash (where all fondant belongs) & enjoy the cake with marzipan!
If you apply the fondant first you'll see all the imperfections of the fruit cake showing through (a fruit cake isn't flat ontop) so marzipan helps with a smoother finish and it doesn't dry the cake out it helps to lock in cake moisture

Hi 👋🏻 , I made my cake in October and plan to marzipan it shortly. I've read that you should leave the marzipan to dry out for a couple of days so the cake colours do not stain the fondant. This being said do I re-wrap the marzipaned cake and put it back into the cake tin in a cool cupboard as it was before? Also my cake is not smooth on the top - nuts/fruit poking through - is it worth levelling the top first or turn it over and use the bottom as the top? Sorry it's a long winded question but I got there in the end!! 😂
Diane Haining Hi, thanks for checking out the video! Firstly, I don't leave any time between marzipan and fondant. Never have and it's never been an issue so personally, I would skip that step but if you're going to anyway, yes, it'll need to be in a tin. Also, if you've covered the cake in marzipan and you can see lumps, one of two things likely happened, either your marzipan was too thin (should be at least 4-5mm thick) or you didn't use a smoother. Use these two tips for the (very well kneaded) fondant and good luck!!! 💛
Diane Haining I would recommend leveling the cake and turning it upside down to cover if you're concerned about lumps. The most important part of all of this is to use fresh marzipan and fondant i.e. just opened pack which hasn't dried out. You'll want to knead it really well - by that I mean, when you think you have kneaded it well, add and extra few mind just to be sure. If it's taken less than 5 mins, you haven't done enough! 😊

Marzipan is an acquired taste, very sweet. As a kid I didn’t like it, now I love it! I wish I had a piece of that cake now! It sounds wonderful! Never peal off the fondant or marzipan!
Deborah Rabbett Hi. My favourite is Satin Ice but that's an expensive option. Wilton an other supermarket brands are perfectly fine in most cases. Be sure to stop it from drying out & knead it really well before rolling. If money is no object, get Satin Ice - it's the best tasting fondant that I've tried. Good luck! 🎄
Hiya, they're all dusted in luster dust. If you pop to a cake supply store, you can buy any colour dust. Just dust with a clean dry paintbrush or mix with a clear alcohol like vodka to make a liquid paint. Good luck!

It's just the icing/marzipan offcuts, rolled into balls and coated in edible glittery stuff. 🙂 Literally, just balls of icing. 🙂
