This guy had everyone at the Nashville Sheraton restaurant fired and replaced by temps. Their only option was to apply as temps at half the pay. He is a villain.
He also lied and said I would get a promotion right before firing me. I had just impressed Japanese investors with my tapas.

Looks great. How do you know when the salmon is cooked?
Gokhan By temperature/thermometer really, but with his experience he probably knows how the salmon looks when it has reached his desired temperature. As the fish cooks the color will change from darker to paler. A good interval is probably somewhere between 105-125f depending on your preference.

Keep your eyes on the salmon. It can get over cooked easily and that's not brueno. I did an indirect cooking on a salmon filet and checked every 4 - 5 minutes. it melted in my mouth.

Where does the tomato water come from?
Salting tomatoes, leaving them hanging overnight in a collander with a cloth.
Its the blanching water used to blanch the tomatoes so the skin peels off easily.

Still used too much heat; you can see the albumin seeping at bottom sides. The technique of putting in and out of the oven is ridiculous and not a real scenario during dinner service.
It’s simple but instead of cutting the eggplant in cubes it would have been better in sliced cut and then chopped in thin pieces. Could have roasted the tomatoes with salt and bit lemon
