Chef 1 Ingredients: Ginger chopped - 1 tbsp Garlic chopped - 1 tbsp Onion sliced - ½ cup Tomatoes chopped - ½ cup Tamarind water (thick) - 2 tbsp Coconut oil - 3 tbsp Dry red chilli - 1 no Mustard seeds - 2 tsp Fenugreek seeds - 1 tsp Green chilli - 1 no Curry leaves 1 sprig Ginger chopped - 1 tbsp Garlic chopped - 1 tbsp
Procedure: Finely chop the ginger, garlic onion and tomatoes. Soak some tamarind in warm water and make a thick paste out of it. Heat a pan and add coconut oil. Add dry red chilly, fenugreek seeds, mustard seeds and let them splutter. Now add chopped green chilli, curry leaves, ginger and garlic chopped. Saute it for a minute. Now ask Chef 2 to take charge and you can go set the table if you feel like.
Chef 2: Ingredients: Turmeric - ¾ tsp Chilli powder - 1 tsp Coriander powder - 1 tbsp Salt - to taste Pepper powder - ½ tsp Water - 1 cup Coconut milk (thin) - ¼ cup Coconut milk (thick) - ¾ cup
Procedure: Take the onions from Chef 1, add them to the pan and saute for 2 minutes. Add turmeric, chilli powder and coriander powder. Stir and quickly add tomatoes. Sprinkle salt and pepper powder & cook for 8 mins approx. Add a cup of water and some thin coconut milk. Cook for 5 mins, and then add thick coconut milk. After a quick boil add tamarind water. Bring to a quick boil again and remove. Our basic coconut curry is ready. Enjoy it with your partner while rewatching your fav sit-com. *Disclaimer: This is not a paid activity. Turn the stove off when you use any milk, coconut, soy, regular..... You can add the milk after switching the flame off and once the milk combines, you may turn in the stove and heat it slow, that way the curdling can be avoided. Cheers!
If I cook this soup for a long time, will it lose its flavor? I want to make a curry with really tough but flavorful meat that will take a long time to become tender.
Sorry chef but on empire question .. I have always noticed that south Indian style coconut curries especially in 5star hotels is very creamy ❓ do they add cashewnut paste to the coconut milk ❓❓❓
vinegar, tomatoes, raw mangoes, bimbili, kudampuli( Garcinia cambogia) these are the things we keralites mostly use to give sourness in our coconut based dishes other than tamarind.
