Hi Jacqui. Thanks. Yes you can freeze this type of cake. Best to wrap in plastic and then in foil. Thaw in the fridge, overnight, if possible in the wrappings.

HI Garf Stiglz. I am not sure how it would affect the apples. But what you could also do, if you wished to, is to soak a few raisins or sultanas in bandy to plump them up, then drain them and distribute them among the apples when lining the base of the pan.
