The Best Korean Japchae Recipe :: Vegan Noodle Recipe

    In Korea, we make japchae every holiday.
    In Korea, the Lunar New Year holiday will be in a few days.
    Korean cuisine places great importance on color harmony.
    It contains a lot of rainbow-colored vegetables and is nutritious.
    The balance of texture is also good.
    You can also add beef or pork, but I prefer mushrooms.
    *** Measurements are using scales (g), tablespoons (Tbsp), and teaspoons (tsp) (not measuring spoons)
    [12 servings/may vary depending on amount eaten]
    ✤ Ingredients
    - 300g Glass noodles
    - 2 Handful Spinach (green bell pepper available)
    : 1 pinch of salt, 1Tbsp sesame oil, 1Tbsp sesame seeds
    - 2/3 each of yellow and red bell peppers
    - 3 shiitake mushrooms
    - 12g dried wood ear mushrooms
    - A handful of carrots
    - Half an onion
    ✤ Source
    - 40g (5Tbsp) Cooking oil
    - 96g (12Tbsp) Soy sauce
    - 225g (15Tbsp) Starch syrup
    - 24g (3Tbsp) Sesame oil (at the end)
    - 10g (2-3Tbsp) Sesame seeds (at the end)
    ✤ TIP
    - You can substitute stir-fried green bell peppers for spinach.
    - Be careful because if you add too much salt when frying vegetables, they may become salty.
    - The sauce was boiled for a total of 4 minutes. If you boil it for too long, it will harden like caramel, so be careful!
    - Rinse the glass noodles and drain well.
    - Add the noodles to the sauce and simmer for a total of 7 minutes and 20 seconds (high heat).
    (Time may vary as each home has different fires)

    What an interesting method! I’m definitely going to try this because japchae is a favorite meal in our house, and I’m always looking for ways to improve existing recipes. This is a timesaver for sure. Thank you.
    I have one child who doesn’t like sesame in any form, but they’ll happily eat my japchae even though it contains sesame oil. I have to pass the sesame seeds to everyone else at the table though.

    My oma was from Busan, and my absolute favorite dish of hers was japchae (I loved her gimbap too). I do prefer it with the bulgogi strips, but something about those cellophane noodles is so delicious

    방금 만드러봤는뎅 짠맛이 좀 부족해서~ 간장을 추가했어요~ 그랬더니 괜찮네용 ㅎㅎ 혹시 냉장보관했다가 다시먹을땐 전자렌지돌려야하나용? 아니면 볶아두대나여? 냉장보관했다가 양념추가하려면 어떤방법으로해야할까요😂😂

      채소가 많이 들어가면 간이 달라질 수 있습니다.
      다시 드실때는 전자렌지 돌리거나 팬에 볶거나 원하시는 방법으로
      데워드시면 됩니다.
      양념을 추가하려면 다시 볶으면서 팬이 뜨거울때 간장 추가하면 될듯하네요

    I don't know how to exactly japchae be this but all the vegetables looks like raw. It is impossible to cooked in 1 or 2 minutes. Thanks for the video however I need some explanations.

      You really need starch syrup. Different ingredients taste different.

    그런데 고대로 따라했는데 면이 탱탱하긴한데 끊겨버린건 왜 그러는걸까요?!ㅠㅠ 소스에 넣고 끓일때 자꾸 건드려서 그런걸까요?

      소스에 끓일때 저어주는게 좋죠~ 너무 오래 끓이신건 아닐까요? 면은 원래 끈어지지 않아요~
      아마 면을 행구고 물을 충분히 안빼줘서 볶을때 물이 많이 생겨 오래 볶으신것 같네요 ㅠ

      12인분이라 전체양을 보면 많아 보이는데요,
      드셔보시면 단맛이 강한 잡채맛은 아니예요.
      채소도 많이 들어가서 양이 많아요.

    고기는 안넣으셨네요ㅠ 돼지고기는 양념하고 볶아서 섞기만하면 되겠네요 . 참. 시금치 말고 부추는 어케 할까요

      양념을 5분의1로 나눈 다음에 200그람을 더 추가하고 싶다면 2/5만큼 더 추가하시면 되겠네요.
