    as of today 7/21/24, Clemeza is still with us, and had lost a great deal of weight... he's still making cooking content, and perhaps all the focus on how unhealthy he was, motivated him to slim down to stay alive.

      But funny enough, nobody ever body shames women for being big, they are supported and called beautiful by both men and women. But big guys are being body shamed by both men and women.
      For example, check out 'Erin McDowell' on youtube. She is big and she makes cake videos. Look at the comments, no insults, only support.

    God bless him. I'm Italian and I don't care if he is not cooking to the exact specs a native Italian would. He's passionate and his sauce turned out wonderfully. Shame on anyone who disrespects him for his recipes due to his physical appearance. You a better Italian, then post your recipe and ensure your face and body are on camera so us wanna be cooks can judge your expertise.

    I’m so glad my mom grew up in an Italian neighborhood. She had Italian girlfriends who taught her to cook their family recipes. She taught me as I also grew up in that area. And I’m not Italian. I’ve had friends from that neighborhood for 73 years. Great family oriented people!

      caveman caveman there are no rules to cooking i dont care where you are from are what your nationallity is. You can learn about cooking from any video. Also the guy is right in my opinon fat does have flavor. My mothers Italian on her fathers side she cooks really good and so do I. I use the rendering from meat to make sauces and gravy and so does most people that people that cook whats wrong with that?

    Hey.. You talkin to me? LOL I love the video, it's the real Sunday Gravy.. God Bless my friend.. I grew up with a few Italian families in CT and I've gotta say, I've helped with 15 family members in the finished basements making the sausage, sopressatta, making the pepper sauces, harvesting the tomatoes, potatos, garlic, basil, oregano, you name it, I crushed the tomatoes by hand helped cook them down, etc., I drifted like the dog in Tom and Jerry to the smells lingering from the kitchen while helping out in the garden or whatever we were doing, making wine, processing venison, etc, or even making grappa, bleeding the eggplant.. I did it all. I could smell that Sunday gravy from here my friend.. I'm lovin it!

      I get that many americanized dishes are crap and or excessive. But you don't need to defend this guy. The dish is authentic. It's an italian regional ragu. And so no, he is not doing something "another way". His grandma's recipe is an authentic italian recipe.

    I have made this exact recipe and it is without fail one of my family's all time favorites. It's a ton of work, however. Homemade meatballs, brasciole... It's time consuming. But all those fresh ingredients... Garlic, fresh basil, parsley, good quality fresh cheese... It's unbelievable. We do this once or twice a year. Fresh homemade garlic bread... Gather your family and friends around and enjoy.

    Wow, so many negative comments. I probably wouldn't use this recipe, but the wonderful thing about recipes is that you can take them and make them your own. No matter where someone is from, if you travel to different parts of that country you will see wild variations on some recipes, and it amuses me when people say it's "not the right way" to cook something just because they're from somewhere else - there are as many taste preferences as there are people on the planet, everyone needs to calm WAY down and just enjoy food the way they like it.

      That is where you are wrong. This is actually a dish in Italy. He nor his grandma made this up! When or if you change or mix something to your liking then you can call it a dish inspired by. It's a ragu. There are like hundreds if not thousands of different ragu's in Italy alone. Not to mention all the other ragu's in europe, scandinavia, Northern africa etc.. I am not saying that you can't make your own ragu. Ofc you can. But it is just not authentic to a region like the one he makes here. So you don't need to defend him by saying you can just make your own. People are wrong in criticizing the authenticity of his dish in this video. He didn't take a dish and made it his own and proclaimed it to be original. This is genuine.

      Oh now I know you're full of it! You're seriously trying to make out I meant his appearance? Ok....he cooks like no chef I've ever seen. Just a typical stuck in the kitchen cooking for 30 years. And before you ask....no that does not make you a chef....the kind we're talking about, where you listed all the 'swanky' places he'd been. I meant Michelin starred. Obviously you just chuck the name chef around in America.....along with that crap you call food!

    My mom would throw a browned rack of ribs in the sauce, talk about fall off the bone goodness. That pork fat would flavor the sauce and make it stick to the pasta, then I'd sprinkle some Pecorino Romano cheese and I'm good to go.

      @@JJJ111JJJ The Italian American community is generally located in the NE coast of the US. There is much less Italian influence on the West Coast. So when the guy in the video embodied a lot of stereotypes and mannerisms of people from the NE East Coast, it gave me confidence in his authenticity.

    See this is a talented & reasonable Italian Chef.. Not only does he take you step by step through it he gives legitimate reasons why there are rules. The best was using garlic and not onion. Why? Because they cancel out. I want to try his restaurant when I’m in the area next time. Good job.

      He is not an italian chef. The title of the video is about spaghetti. What he cooked are not spaghetti, are rigatoni instead, with meatballs that nobody in Italy put on pasta.
