    This looks GOOD!
My family is from New Orleans. This is very similar to the holy trinity blend we use in Creole/Cajun cooking. Our version uses fresh celery, onion and bell pepper. With garlic and green onions added in.
We use it to cook just about everything. 😂
I will try out your version as well to use in my Jamaican and Caribbean style dishes. I normally freeze all my fresh seasoning in ziplock bags. But it’s good to know adding salt and vinegar will preserve it in the fridge. Thank you for sharing. 💗
