All you need a low grit (38 grit) to thin out a knife and a natural smooth stone for koba or microbevel at 8 degrees per side or 3 degrees on the back side and 7 degrees on the front side. You don’t need to flatten a stone, sometimes a concave stone is good for convex sharpening.
Definitely true, there are many ways to skin a cat! This is our preferred way to sharpen in store, and the way we teach our customers. We do convex grinds sometimes, but we find applying pressure on different sections of the bevel works for us. Thank you for the feedback!
