  • This is a simple way to compute your food cost and a suggested way to determine your product price.
    For the pricing, it will still be up to you how you want your time, effort and skills be paid. Again this is just a suggestion.
    If course businesses have their own ways to compute pricing factors in and those involve managerial decisions.

    Hi, what if the recipe calls for cups or ounce, do i need to convert every ingredient to grams and ml to be able to compute for the right amount? Thanks

      Yes that is recommended. You can also do the actual kitchen test of weighing the cup of ingredients. ☺

    @Ee Katrina I can't find your comment. But I have answered a question similar to yours. Yung packaging pwedeng iadd after getting the selling price para at least you get the cost of the packaging back. As for delivery, most businesses now do not include it sa selling price. They charge it separately. Direktang pasa ng delivery charge say from courier apps.

      @@katherinemendoza3375 for me I just add how much the box or wrapper is. 🙂 sometimes we put items in boxes and we buy boxes in packs of 10pcs. So how much would that be per piece would be the value I would add directly to the selling price if ever. 😊

      In theory Opo kaya po x3. 1/3 po yung ingredients cost, 1/3 utilities (itatabi at iipunin pangbayad ng tubig, kuryente, gasul etc), 1/3 mark up (ito yung kita na pag inipon din, dito kukunin ang pondo pang bagong produkto, workshop at Iba pa)

    Hello po. Yung vanilla po ay nasa ml unlike the other ingredients na nasa grams. Ok lang po na iniadd mo yung vanilla as grams para makapag come up ka ng total weight?

      Yes that is OK. Though sa kitchen test ko po ml is equal to grams for the brand ng vanilla na ginamit ko. Some brands diffuse agad and Evaporate kaya negligible din lalabas ang weight ng vanilla.

      It is a pricing standard po. Pinakabasic and madali ma follow. It is also called Rule of Thirds in pricing kung saan 1/3 ng Benta niyo dapat mapunta pang bayad sa nagamit na ingredients, 1/3 dapat maipon at mapunta sa utilities and packaging, 1/3 dapat maipon at mapunta sa tubo at bayad sa sarili.

      For hot dishes, usually tinitimbang ang final product or dinidivide per portion na to get total yield. It happens on kitchen testing.

      Marketlist only reflects how much yung pagkakabili ng ingredients. Hindi required itotal ang market list kasi reference lang sha ng presho. Yung food costing o yung recipe requirements yun yung magagamit mo talagang ingredients based sa recipe. Kaya recipe requirements ang kailangan i-total.

      Kailangan niyo po timbangin yung carrot then use yung actual cost niya sa recipe na gamit niyo. 1 carrot is not always 1 kilo.

      Yes ma'am especially for gourmet cakes like sans rival, black forest, semifredo and the like po. But for custom cake art, it may not be enough since time and skill factor of cake art like carved cakes or artisan fondant/buttercream art cakes require high value consideration.

      Yes and you have to actually measure per ingredient. Kasi iba ang timbang ng iba-ibang ingredients kahit parepareho silang tag isang cup.

      Yung portion size ay kung gaano kadami yung "tingi" na benta. Mkukuha gamit timbangan. O kung ang nagawa ng isang recipe ay 14 pcs na cookies, ano ang timbang kada cookie? Minsan kasi sa isang recipe may oorder sa atin na ang request mas malaki, kaya kinukuha din ang timbang.
      Halimbawa, 300 ang nagastos sa 1 pan ng brownies tapos ang hiwa 24 pcs. Portion size 1/24 pc. Kung mas malaki hiwa ay magiging 12 pcs. Portion size ay 1/12 pc. Para mas macompute ang saktong halaga, kinukuha ang timbang.
      Lalo kung ang umoorder ay nagspecify ng timbang kada piraso ng order niya.

      Pwede naman po. You can cost it like how many glasses ang lumalabas sa isang kilo ng milktea or ilang tea bags? May separate recipe din po ba kayo sa black pearls ninyo?
      Example: 10 glasses of caramel Pearl tea
      3 tea bags at 25 each = 75
      200g brown sugar at 50 per kilo = 10
      800ml fresh milk at 75 per liter = 60
      200g black pearls at 80 per kilo = 20
      200ml caramel sauce at 300 per liter = 60
      1 liter water = 35
      250g ice at 50 per 5 kilos = 2.50
      Total cost of the 10 glasses will be?
      Divide it by 10 to get the cost per glass.
      Multiply it by 3 to get your selling price.

      You can also measure the total recipe in liters para you can compute how much is the cost say per 350ml.

      @@gipome9589 pwede niyo po gamitin yung data niyo ukol sa recipe. Since may presho na din po kayo per ingredient kukunin niyo lang po kung magkano ang nagagamit sa bawat recipe. Tama po na i-add lahat tapos po idivide sa ilang baso nagagawa.
      Kung per glass ang recipe mas maliliit ang quantity and kung 1 serving lang po ang recipe direcho multiply na po iyan to 3.

      Para po mas accurate na malalaman kung ilan ang nagagawa kada timpla ay magactual mix po kayo at sukat ng standard ninyo na baso. At yun na po ang magiging basehan ninyo sa lahat ng recipe ninyo. Mas dependable na po ang mga susunod ninyong estimate kung may actual sample kayong nagawa dati. At least hindi naman po kailangan kada bagong recipe gagawa po kayo ng madami (although sa industry, mas dependable po ang costing kapag may actual).

      Usually may product at yield test po na gagawin. Isang recipe ilan ang magagawa. Actual produced number of products dapat measured din ang timbang per piece para po parepareho.
      Halimbawa nagastos ninyo 500 sa 25 pcs. And benta ng luto na will be 1500 for 25 pcs.

      Estimate yung costing before kasi makukuha naman po ang presyo per kilo. Actual yung after para mameasure po ang final pricing.

    Hi po. Newbie here trying to start a small business. Can this be applicable to any kinds of food products kahit hindi baked goods?
    Regards with gas, electric usage and packaging is it included in the suggested selling price after multiplying it? TIA for the answer.

      LIKELY A VERY LONG READ AHEAD... Example product is still a baked good but you can determine the item and replace accordingly with your standard recipe.
      Example:
      3 hours to decorate just 12 custom cupcakes.
      Here is another way of interpreting Rule of Thirds in pricing...
      If you apply the minimum wage in NCR of 500 per day (62.50 per hour in 8 hours of work schedule), this means this box of cupcakes should be 187.50+ingredients+utilities+packaging+delivery+government dues
      Say ingredients costed 150
      Packaging is 30
      Delivery is 405 (grab one way+public transport on the way back)
      Utilities...
      Water 1000 per month
      Elec 5000 per month
      Internet 2800 per month
      LPG 1500 per month
      Total 10,300 per month
      Estimated per 30 days
      That will be 343.33 per day
      If i divide that to 8 working hours that is 42.92
      42.92 x 3 hours
      That will be 128.75
      Thus applying the above formula and replacing them with the appropriate values
      187.50+150+30+405+128.75
      =901.25
      If rule of thirds is to be applied and you compute labor cost as your pay for yourself this means 901.25 is two thirds of the suggested base retail price.
      901.25/2
      Will be 450.63
      Multiply to three to satisfy the Mark Up third
      450.63 x 3 = P1351.89
      The twelve cupcakes should be sold and delivered for at least P1351.89 or say P1352
      And that does NOT compute government dues yet.
      But of course, we have to bring our minds back to reality. Not every one of our potential clients would be willing to pay for this much right?
      I sell and deliver boxes of cupcakes like these for at least 1500 (we issue receipts and maintain the business permits) and if conditions apply (maximized discount for repeat clients, bulk orders, relaxed prep time and some applicable seasonal promos) the price is no lower than 1000 as decided by business owner (Guess which part of the computation is sacrificed?)
      Our clients pretty much understand once we explain how our products are produced. Sometimes we have to extend our patience in letting them know it isn't Just a cupcake or just a cake.
      Clients who also value the work you do know this is the way. And they will know if you have cut aspects of quality in the product. Repeat clients especially know your mark on the products and they pay not just for quality but also for consistency and dependability.
      This is why it is equally important, if not more important, to take care of repeat clients than spread the word, cast a net and attract more new clients. The repeats testify to your product and you will notice they don't delve much on your price.
      The right and matching clients are willing to pay for the quality of product you produce and deliver.

      Depende po kasi talaga sa ingredients. Also if yung black forest niyo po Ay yung may couverture chocolate curls, kirsch at black cherries, mahal po siya talaga.

      Low cost 6x3 black forest makukuha if alternative ingredients like compound chocolate, simple syrup at maraschino cherries ang gamit. 😊 also pwede din gamitin whip cream na masarap, stable Pero di Kasing mahal ng high end brands.

      To answer your question, the lpg, electricity and other expenses fall within one of the thirds in computation.
      1/3 ingredients
      1/3 overhead (this is where lpg expenses should be covered)
      1/3 your pay
      This is why you multiply it to 3.
      In essence, in all your sales you have to set aside and save 1/3 to buy new ingredients, 1/3 to apy for your bills and 1/3 for yourself as payment.

      Yung video ko po on gourmet cakes touched this. For some establishments in effect ang nangyayari instead of x3 magiging x4 (or if we talk of percentage instead of FC33% magiging FC25%) kasi yung pang apat na part is allotted for government dues.
      Kaya mahal yung mga nasa mall or established businesses kasi they have business permits to maintain and government dues to settle regularly.

      Rewatch mark 9:33 onwards.
      The dough yielded 1.69 kilos, the example i gave is how many cookies can you make if the portion is 40g. 1690 divided by 40g then the result is 42 and a decimal value which i said you can round down to 42.

      If you are using x3 isang third po sa presyo yung labor rent and utilities. Kung baga po sa 30 pesos worth ng ingredients kailangan ibenta niyo sha ng 90. Tapos yung 90 hahatiin ninyo sa 30 pangbili ulit ng ingredients, 30 iipunin para sa rent-labor-utilities-packaging at huling 30 iipunin pangbayad niyo sa inyong sarili.

      usually we assign tsp with 5 g or 5 ml for the computation. tbsp will be 15 g or 15 ml.

      For foodcost percentage you set hanggang anong % kaya mong ialot for ingredients. Tapos idedevide po by decimal form ng %. Example dapat kamo 1/4 ng selling price mo yung ginastos sa ingredients. Ang % for niyan ay 25% or decimal form na 0.25.
      Kung ginastos mo sa ingredients ay 100 pesos lalabas dapat 100/0.25 then ang sagot, yun ang selling price which is 400.

      If premixes, food cost can be higher kasi the time and labor to prepare finished products add to the cost. If you're going to sell frozen dough or ready to cook products, x2 will be OK. Lalabas 50% food cost, 25% Overheads and 25% mark up.

      Kaya po x3. 1 part ingredients, 1 part overheads (dun po yung gas and water budget manggagaling) and 1 part mark up(yan po yung kita niyo)
      Every time na may benta po na cookie say worth 24 isa. Dapat ingredients at worth 8 lang, para yung 8 iaambag niyo sa water and gas pag dating ng bill, and 8 itatabi niyo para sa sarili.

      4.05 ang supposedly tubo
      Kaya total

      Sa ganyan computation nandyan na dapat ang tubo.

      Halimbawa gumawa ka ng 1000 pcs lalabas ang gagastusin mo sa ingredients
      P4,050 para magawa yung 1000 pcs
      Pepreshuhan mo sha ng 12.15 each kaya kapag nabenta mo lahat ang benta total ay P12,150.
      Imaminus mo yung 4050 kasi puhunan mo ulit sa susunod na production.
      Itatabi mo yung 4050 kasi pambayad sa overhead: kuryente, tubig, transpo, gasul, packaging
      Last na 4050 yung bayad mo sa sarili mo kasi nagtrabaho ka or other payments na hindi napagkasha mabayaran gamit yung overhead budget.

      usually kasama po sa product development ang shelflife test para malaman kung kailan expiry. :) halimbawa po sa isang batch ng gagawin magtatabi po ng isa o dalawa para matest ang best before date (hanggang kailan masarap) at expiry date (kailan di na pwede kainin).
      kaya po minsan mag mababalitaan na nirerecall na batches ng mga factory product kasi ang sample unit nila nakitang may problema.
      may iba din ang test units o product ay pinapadala sa FDA for nutrition analysis at applicable standard shelflife.

      Lets Say you have 30 pesos for 100g baking powder. Test measure po kayo kung ilang tablespoon nagagawa. Halimbawa nakapag scooop kayo 15 tablespoons dun sa 100g lalabas 30 pesos divided by 15 tablespoons. Per tablespoon it is 2 pesos.
      Then for 1/4 tablespoon lalabas 2 divided by 4. Value ng 1/4 tbsp will be 0.50 pesos.

    Thanks for the video! However, I would say na dapat isama pa rin palagi ang overheads, labor, equipment depreciation kasi you can never tell if the things I mentioned would cost more than the food itself.

      For me packaging is always added at cost meaning hindi ko po siya sinasama sa itatimes 3. example if 100 pesos gets you 30 cookies that will be 10 each. Tapos you pack them by 5, that is 50. It will have a selling price supposedly of 150, then you buy a box worth 15. You can sell it at 165.

      If kikitain po sa bentahan ang rule of thirds po assume na sa bawat 90 na benta, ingredients ay 30, miscellaneous exp 30, at tubo 30.
      Kailangan maplano niyo po na Ilang 90 ang kailangan niyo mabenta para matustusan ang pangangailangan ng business.
      Halimbawa, sa kada buwan, ambag sa kuryente ng business ay 500, sa tubig 300, sa internet 500, sa assistant 5000. Total overhead ay magiging 6300.
      Yung 6300, 1/3 dapat yan ng total sales.
      Ibig sabihin 6300 din ang dapat mapuhunan mong ingredients.
      Tapos 6300x3= 18900 dapat ang benta mo sa isang buwan.
      Lalabas may 6300 kang kita.

      Kapag unli po usually inaassume is 3 to 5 servings ang consumption ng customer. Depende din po sa location kung Malapit o Mura ang product ingredients.
      Example po sa unlilugaw, dapat po may standard recipe muna. Sabihin natin P300 na worth ng ingredients nakakaserve ng 20 large bowls. Lalabas ang foodcost is P15. Per unliserving ang cost is at least P45 to P75. Lalabas pinakamurang price ng unliLugaw, kung rule of thirds parin po ang iaapply, is P135 and pinakamahal will be P225.

      You have the whole recipe the test the batch and portion by weighing say 90g (buffet serving) or about 200g (plated serving).
      Now many plates were you able to make. Also be sure that each plate is the same in quantity, topping and garnish.
      Divide the recipe cost by how many plates you made and that is your cost per plate or cost per portion.

      Cost of ingredients/55%
      Example po kung nagastos ninyo Ay P800 sa 2 kilo ng barbecue pork meat lalabas po
      800/0.55
      Ang magiging selling price Ay
      Magiging 1454.55 yung dalawang kilo.
      Kung ibebenta niyo po ng tag 500g packs lalabas
      P363.64 per pack o P365.

      @@MJETravels ideally yes if you want to standardize the recipe. Do you buy in by piece? If that would be easier for your batches then you can do that. Similar to how eggs are factored in. It is by piece but for bigger production, most kitchens measure by ml or liter especially for eggyolks or egg whites only.
      As for fruits, there is a more complicated way of costing. Something like you cost the discarded parts of the fruit to be included or added in the cost of parts that you use. More accurate but too tedious for regular recipe batches of say, 24 pcs of cookie or cupcake yield.
