Putneni/Puligi/Purini Recipe | Steamed Spice Cake | Polynesian Dessert

  • Puteni (Steamed spice cake) has always been a recipe I was keen to make. Taking me back to my childhood, I would enjoy a slice of Puteni topped with custard. The rich and sweet taste of the spices is what makes this cake a delightful and an enjoyable dish to make. One bite and it feels like a taste of the South Pacific. Hope you all enjoy!! Malo!
    ____________________________________
    Caramel sauce:
    1 cup sugar
    1 cup water
    1tsp vanilla extract
    Dry ingredient:
    4 cups white flour
    3 1/2 teaspoon baking soda
    2 teaspoon nutmeg
    3 1/2 tablespoon cinnamon
    2 1/2 teaspoon all spice
    1 teaspoon salt
    Wet ingredient:
    1 cup sugar
    1 cup soften/melted butter
    3 eggs
    1 teaspoon vanilla extract
    1 can evaporated milk
    Optional: Add 1 cup of any dried fruit
    Need turkey tray
    Top puteni with custard

    my mom uses the method where you add the batter into a cheesecloth, tie it up, and boil it in a big pot.

    Talofa and Warm Pacific Greetings, wow this is absolutely similar to the recipe my dad used to make our Puligi for White Sundays back in Samoa in the 60s and 70s.
    We used the boiling in the cloth method but I prefer the steamed version as it's done on your video.

    I have not been to beautiful Fiji since 1998 and did not get a chance to enjoy Fijis version of puligi. Encouraged by the great Dr Sebi, I now have a much healthier version for those that are interested. For liquid: 1 cup of agave, 1/2 cup of of nut (COCONUT) milk, 1/2 cup mineral water, 4 oz butter, 3-4 burro bananas, mix. Dry: 2 1/2 cups (spelt) flour, 1 tsp baking soda, 1 tsp ginger pwdr, 1/8 tsp clove, 1/2 tsp salt 1/2 cup raisins. Sift into liquid. Steam 90 min. Ty TOSP! Enjoy!

    Am I supposed to wait for the bundt pan to cool before flipping the puteni? Or is it okay to flip the puteni immediately after its completely cooked?

      I waited about 30mins, but you can let it sit till it completely cools

    Hi, do you add all of the sugar and water which you melted in the beginning to the mixture?

      Hi, I've adjusted it on the video and ingredient section, so it adds up to the amount that I poured into the mixture. I doubled my liquid during the process which is why I didn't add all of it. But the ingredients mentioned in the video is adjusted so you add all of it.

    I did everything right but the baking was wrong. I baked it on 180 as you mentioned and it took me 3hrs and it was still not cooked. Please correct me on the oven degree

      Did you use Celsius or Fahrenheit?

      I thought l was the only one. I came here to say mine was still raw in the centre and thought maybe l should have used boiling water? I used a normal cake tin because l don’t own a bundt pan. I couldn’t put it back in the oven because l had poured all the hot water out of the tray l baked it in 🙄 The parts that were cooked were very tasty. I will have to make it again, but l will have to buy a proper pan.

    Recipe doesn't specify the temp that it's baked on and the time it takes. Pls any info? I'm like others my gpa use to steam in a huge pot. Ty for sharing.

      In the video I mentioned the temp and time, which is 180 degree celsius and bake for 1hr 15mins. Let me know how it goes.

    Hi I'm native Fijian we add coconut cream , in our purini , and steam on stove top , but thanks it's a new way of baking , Vinaka Vakalevu

    Oh so Fiji calls it Purini just the same as New Zealand Maori, they call it Purini too. The Maori one made with burnt golden syrup is nice and their burnt jam one is really nice but cool, steam pudding must be a Polynesian thing.
    You make yours look so simple I might cook one later, yummm

      Kia ora... It's the same process as making the Maori version! There's three types of way to make what we call steam pudding and this is the most popular way the other way is crumbling butter and flour to make a loose biscuit type of dough then add your burnt sugar and then said liquids

    Would much better if you add coconut milk in your caramel sauce. Trust me the smell is divine. That's how we do it in Samoa. That's the secret ingredient for our Puligi

    I noticed you didn't add all of the caramel sauce to the mix, do you have a specific measurement?

      The recipe called for 2 cups of water but when attempting the recipe, I realized 2 was a bit much so thats why I only mentioned 1 cup (as seen in the description) 😊

      You can make evaporated milk from whole milk. Done it plenty of times

      With the recipe it only required baking soda but I don't think theres any harm if you use both...But yes, it was baking soda
