    During the covid pandemic (2 1/2 years) I was in a province in the Philippines. While there we built over 25 C.R's (toilets) and built and repaired many homes and distributed food and other essential items thanks to this youtube channel and the subscribers.     I love the provinces in the Philippines, I desire the simple life, when I retire I prefer to live in the province over the city, no stress, no traffic, no pressure, be happy as long as your surrounded with smiling happy positive people, I love the old man's laughter, it's contagious, I miss the Philippines so much.

    Hello Dustin, fyi only. Don't drink too much tuba, you'll get drunk from it especially if you store it more than 24hrs. The longer you store the tuba, the more it get sour, and if stored longer it will become vinegar. A vinegar which is way much better in cooking adobo. Just in case you climb a coconut tree, don't hold on the lowest branch, its way too vulnerable, at least should take a grip on the 2nd branch.     That brown powder added to the tuba is called 'tungug' (tannin POWDER) in English.. the purpose is to stabilized the sweetness taste of the fresh tuba trough its earthy flavor.

    Dustin I enjoyed watching your video all the time. I remember the first time I watch when you were in Divisoria, Tondo. Our kababayan there are very welcoming and friendly. They impress you with genuine hospitality. I love the way you make fun with them...dustin I'm truly proud of being Filipino our culture and tradition that we preserve and practise and I Am proud of our race..thank you dustin for enbracing it.     The coloring is called tungog, from Ceriops tagal, a species of mangrove that gives Philippine local coconut wine (tuba) its maroon-orange color and bitter taste.

    Hey Dustin what the hell are you doing there mate? why do i love you man? haha... that red color mix is naturally comes from the bark of a tree-crashed/ground. it helps the fermenting process of the fresh juice to become wine. its called tuba or coconut wine in the visayan region...

    Dustin, “Tuba” in english is called coconot wine not coconot juice.
    “Tuba” has many benifits. It’s good for your health and it helps you get good sleep.

      Ben Tumbling If you ferment it, it becomes Vinegar, if you ferment it for couple of months, it becomes “Lambanog”.

    Tuba is good natural drink. When you keep the tuba in a container for several days it will turn into natural vinegar, a very good vinegar, no chemicals. My father's hometown is Badian, Cebu.

    Give me some of that guava. Haha. We used to harvest that on the other side of the mountain where we lived when i was in elementary and sold it to my classmates for 25 cents each and used the money for my baon.

    you see my friend the real rich person is not the taker. rich people are the giver. that 60 year old man sells that coconut wine for 60php per 1gallon and still manages to give you coconut wine a taste. i hope many will learn from your videos.

    When you harvest juice from a coconut tree, expect no fruit in it. Because the juice or sap is taken from the inflorescence or flower of the tree.

    The tuba ingredient is called TUNGOD. The dried bark of a certain kind of mangrove tree. The Tungog would cause the natural fermentation of alcohol, coloring, good flavor and prevents the souring of tuba wine or coconut wine. White tuba is pure without tungog but it easily souring in a few days to become vinegar.
    Some tuba makers are using buko juice from buko nuts, yeast for wine permentation and food coloring, orange color. The best tuba is with TUNGOG natural ingredient and the juice from stem of coconut tree with brown orange color.

    i always like "tuba" (cocnut wine),my grandma has 3 hectares of 200 coconutress and our"tuba gatherer"collects around 30-40gallons everyday 6--11am: thats where i started dringking-cocowine.
    the red"baluk" it maybe "fermentized" & bubbles cocwine right away >>> turns into Alcohol 3--4% "tuba".

      Balok or tungog is mix to tuba...to prevent you from stomach disorder...cause raw tuba sometimes make you porotpot(LBM)🤣🤣🤣.

    I enjoyed watching your videos specially when you're interacting with the locals (my fellow Filipinos) and tried local foods too that you haven't tried before...I love those fruits the pomelo (looks like grapefruit) and the guyabano (soursoup) which is very expensive in some other countries like Singapore (it cost up to SG$50 a piece the big one).     That white juice tuba when you heat it or just let it outside with the sun it turn sour and that was the coconut vinegar.. And the red one with tungog is the local wine we drink. Tungog helps to get that bland taste and makes you drank.. It is sweet when it was taken fresh everyday.

    The coloring they add is to.conceal the less appealing look of coconut sap. It's just like 7up or Sprite. They use green colored bottle to make it look good and people buy them. The orange color of tuba appeals to the drinkers. The food coloring called Tungog (tong-goog) helps in the fermentation process. A one-day old tuba is sweet compared to a week old or a month old which has strong alcohol taste already. If you don't control the fermentation process, your tuba turns into a coconut vinegar. To control the fermentation process, you seal the bottle tightly for days or weeks. If you just coconut vinegar, open the container and let it ferment in open air. The air speeds up the oxydation process.

    That was Coconut Sap, then turn to authentic vinegar (called Tuba), and after long fermentation, it turned to Coconut vodka (or Lambanog)

    the red powder is grounded bark of mangrove tree, it contains tannin a natural preservative , prevents the sugar in the coconut toddy (tuba) from fermenting into vinegar it also add bitterness just like hops in beer

    Dustin I think you know the mangroves trees, you can see this on the shoreline. the bark of this trees are the ingredients that they pour in the Tuba juice to make the color red. but it's good no chemicals added

    Back on highschool I had an experiment of feeding a new born puppy with "tuba" the puppy lived. And became so fat as tuba had high content of glucose. Tuba is good for the heart so they said.
    The person who climbs the coconut tree is called Mananguiti. They harvest it mornings or afternoons. Bahalena is aged tuba. Other people make some traditional cocktail kinutil or kulabo. Its pretty good.
    If the coconut tree produces tuba, more than likely no fruit as the flank or flower is the one being cut and trimmed where the juice come out. The bucket where tuba is being catch is called sugong. Made of bamboo. The red/orange powder is called tungog. I believe its bakhaw..maybe.. .enjoy your stay.

    Inside the bottle is a natural coloring and fermenting agent-comes from a plant, I heard he says from "Bakhaw" so it's the mangrove but don't know whiich part of the tree ...maybe the skin of the branch or the fruit that they pound or grind...

    Tungod is a pulvorized bark of a certian mangrove tree. Tungog is used to color and or perment the tuba for drinking. Using tungod is to avoid constipation or to have loose bowel movement LBM. In leyte and bohol, we dont drink plain tuba or without tungog.

    Hi, Dustin. New subscriber here. Nice videos you have.
    The reddish 'ingredient" he mixes with the tuba (toddy/arak in some cultures) come from the bark of mangrove trees.
    The reason why some trees don't have fruits is because the "manangguiti" gets the tuba instead of letting the flowers develop into fruits. tuba liquid is the SAP from the coconut flowers (he slices a bit from the bloom daily to encourage more SAP to come out).
    When tuba is further fermented, it becomes vinegar.
    BTW, tuba has alcohol in it and if consumed a lot can get you tipsy.

    Tuba is life haha. I like it when it's new because it is very sweet. My mom always drinking that. She siad, it makes her energize 😂. You should try native chicken, it's really tasty.

    Dustin, “tuba” is a coconut wine. It is different from coconut juice because the sugar content has fermented to become alcohol. When you drink too much you get drunk. Some will have diarrhea for days. The red color differentiate it to be tubâ from just a regular buko juice.

    In Kiribati we call it "TE KAREWE", the skill is unique, all we need is a special knife and a tie, then the timing with the moon, palm cleaning, stabbing, and twisting, style of tying, and then fine cutting of the tip until the juice is dripping. There is a time interval at which we remove the palm cover or shell in segments. The finer your cutting and the more committed you are to your KAREWE the more juicy it becomes🤣, it is kinda the way we treat her🤣. Advanced styles comes with enchantment calling upon spirits to bless🙏 your KAREWE, when you sharpen your knife, before you take the first climbing step and while you are cutting. The real fun comes when you are actually doing it.👍 I must admit there are many other interesting styles.

    Lol. Tuba is the local coconut wine. It's fermented with a red color to make it more appealing. Sometimes banana peels are added to the tuba to make it ferment more. The magic of coconut.

    Dustin, In India we call that Toddy Palm Juice. It's sweet when fresh cut in the mornings and then gets a little sour later in the day. Must drink it fresh for it to be sweet. But, if U drink too much U will get intoxicated. It's a Poor Man Alcohol!

    Tuba(coconut wine)its a healthy wine. The color that they put on it its not a coloring food. Its from the bark of a tree. They make it into tje powder, and put it in the juice. Yes it is sweet. But after tree you can feel the alcohol already.

    Bit of trivia. The tungong is not just for color. It is actually made from ground margrove bark (I forget the speices). The tanin from the bark prevents the coconut juice (nectar) from oxidizing and turning into vinegar - and it slows down fermentation allowing the coconut nectar to turn into wine. Its the same pronciple as ageing grape juice in oak casks (barrels). 😁😁

    The tuba has alcohol. For the alcohol to be more potent it has to be distilled. the process is you have to boil the tuba, the steam/precipitation becomes a liquid. that liquid is alcohol, locally known as lambanog.

    It's not coconut juice. It's coconut sap. The stem where the coconuts usually forms, is cut so that the sap can flow into the container. The longer it ferments, the higher the alcohol content. Tuba is about 7% alcohol by volume.

    I missed climbing the coconut , marang etc in the privince ... I remember the tuba(cocnut juice) its very sweet ...

    inside that red bottle we call it "barok" here in eastern samar..it can last the flavor of tuba and not easy to become vinegar..

    My father also can do this everyday,and now he climb in the coconut trees ,and he can get a coconut wine ,,,the white color of tuba is like pure and fresh ,,It's seems like a water hahaha but It's really taste good than the red color.,,,I want to drink tuba ,,I really miss it ..

    @14:30 at the center of the screen, the tree with some brown leaves is a Cacao tree, where cocoa - the main ingredient of chocolate come from. Just my 2 cents ;-)

    It came from a bark of a certain tree use in fermenting.I guess PH import that from Indonesia.Fresh "tuba" is sweet but if mix with TONGOG...it will become bitter and taste different

    The red color is Mangrove bark, called baluk,baruk..etc.

    That is a bark from a mangrove tree and its for a natural coloring to have a red color of tuba or coconut wine and for flavoring too.

    Tuba is usually red color. And if it's white it looks like vinegar. There is no coconut fruit cause this coconut tree is to make tuba.

    The main purpose to putting a tungog or red color to the coconut wine to maintain the taste of coconut wine because if without red color the wine will become a vinegar or will be come very sour taste.

    Very Informative/educational! Guavas are very high in anti oxidants specially vitamin C in it's skin & flesh parts , that's what U should eat! It's Vit.C is a lot higher than citrus fruits!!

    Its sap from the tree that ferments to wine when exposed to the air. They cut the flower stalk and let the sap flow from the stump. That also explains why those trees dont have fruits.
