    Never get tired watching Japanese people work.. Hell of a lot of work for one man prepping all those things, still everything as smooth as butter.. Rest of the world 🌎 has a lot to learn from them ❤

      You see the same in restaurants everywhere -- including American cities. Chefs are hard-working people or their businesses do not survive.

      @@pauldeck4500 Yeah running restaurants like these are hard work if you work the back it's always like 10-12 hour days and if you're the owner and also work the kitchen you're probably looking at 14+ hour a day if you include all the prep work that is necessary too.

    I have done food-prep for a living before, but I have never seen one man have this much productivity in one morning. I am astonished. I always thought I was pretty good, pretty fast, but I was never even close to the precision of this fellow. Just amazing.

    Such a humble way of life and a true, honorable existence and trade! To be able to wake early everyday, prep and serve hundreds, essentially filling the belly’s of thousands, all with smiles on their faces after their meals are finished! Many Americans can’t comprehend such dedication nor ever reach such work ethic! Hats off to ya boys!

    I was so spoiled living in Asia at the speed and efficiency by which Asians can cook such delicious, fresh and quick meals while fast food restaurants can barely keep their tables clean and the inefficiency is maddening.

    I love how noodles get drained right onto the floor and cutting boards are rinsed also just onto the floor. There must be a floor drain and then every night they must just slop it all down the whole and bleach the floor.

    I see the different between chinese food vs japanese food...
    Chinese food seems to be much oily and thick flavor (they put a lot of things inside to make it more delicious)
    Japanese food are simple, lighter not that much oily and they focus on 1-2 flavor (for example, if we want to eat beef ramen, they will do their best to bring out the flavor of beef without any other additional seasonings. they focus on 1 taste. they make original taste.
    both are delicious and healthy food.

      Not all 'chinese food' are oily. It depends on which region, which province Chinese food that you saying it's much oily. There's Chinese food in some region/province which is less oily. Also you need to understand the food culture between China and Japan. In Japan it mostly is Japanese food or some influence by the Chinese. In China, it borders to many countries which some part of China has food influenced by the neighbouring countries.
      So saying Chinese food is much oily is not correct.

    Quite interesting I have never seen egg shells thrown into soup broth before. I know their eggs are clean in Japan, but does the shell do anything for the broth?

      Eggshells are utilized to clarify stocks and broth. When cooking stock, a layer of particles forms on top of the liquid. The egg proteins cause a chemical reaction that makes the particles cling to the shells instead of making the liquid cloudy.
