Yes, I had forgotten about Chinese Chicken Salads. They were very popular in CA back in the 80s as well! My favorite is a Grilled Chicken Cobb Salad with Maple Dijon Dressing (I grill the romaine head as well- delicious!)

These salads look amazing! One tip -- if you cook the salmon low and slow (like at 250) it won't ooze all that white protein and the texture is a bit better. I can't wait to try these recipes!

My favorite salad is kale with diced apples, shredded carrots and dried cranberries with homemade maple Dijon vinaigrette, in fall-winter I sometimes add roasted cubed sweet potatoes. Your salads look delicious, I will be adding some of them to my meal plan without the chicken! Thanks Jennifer

I love chicken grilled for salads, so versatile! My MOST favorite is Caesar (I have a divine recipe for the dressing), but a good Greek salad, or even some lettuce, cucumber, and tomato with chicken and ranch dressing makes my day! I love your salmon salad plating, definitely looks like the 50's!

I like to grill a top sirloin steak, medium rare. Then, add some, sliced, to crisp romaine lettuce. Add, black olives, cheese of choice, a few whole wheat croutons and some dried cranberries. Top with some ranch dressing or blue cheese dressing. Delicious and satisfying!
All the salads look so delicious and perfect for this time of year. I will be trying them all. One of my favorite salads is a peach salad. Ingredients are a fresh peach, an heirloom tomato, diced red onion, and fresh basil, I use olive oil and some red wine vinegar....this is one serving. I love getting the cooked shrimp from Costco. I put that on top of greens and pretty much whatever I have a taste for. Then I add a drizzle of either a Balsamic glaze or vinaigrette.

The secret to perfectly cooked protein is the Thermo Pen. Pricey, but you will never have uncooked or over cooked protein. Cooking protein by time is not sufficient for succulent results. I keep an index card in my recipe drawer with the various types of protein and their temperature for desired doneness( rare to well). It’s a must in my kitchen.
Yum!!! You inspired me to get an Aerogarden. So far I've just grown lettuces and I love it! Also, I just ordered the seed starting add-on, to grow starts for the outdoor garden!

Yes, we have Chinese Chicken Salad here in the midwest (Indiana) and it is on a lot of menus. Some of them even have a mixture of chopped cabbage with the lettuce, and always with mandarin orange segments. Slivered or thin sliced almonds on the salad is also delicious! Great video.

My all time favorite salad is a traditional Greek cucumber salad - if I’m in a hurry or short on supplies, I only need cucumber, feta, oil, oregano, salt, pepper, and vinegar. Sometimes I’ll add red onion or even turn it into horiatiki (Greek village salad), which is what Greeks refer to as Greek salad. The Greek salad from Natasha’s Kitchen is a more recent favorite even though it isn’t authentic. Downshiftology also has a great Greek salad.
I love entree salads during warm weather! And I guess not so warm weather too! My current favorite is one by Hungry Girl, Chicken Waldorf Slaw w/a greek yogurt dressing. I'm definitely looking forward to trying the BBQ one and the citrus one! Can I say, wow you cook your salmon twice as long as me 😊. I might cook it at a higher temperature though, 400*. Thank you for all the great meal ideas!
You can also use other fish for the salmon, we do this and it's wonderful especially with haddock. Lovely recipes I happen to have most of the ingredients on hand. My favourite dinner salad is sliced fennel bulb, baby spinach, cut up orange sections, sweet white onion sliced into rings, with a bit of feta, and black olives, dress with a simple olive oil, salt, and pepper dressing, and garnish with more sliced black olives, orange sections and a few fennel fronds --- delectable!!!! Also I like to add chicken slices as well. Chef's kiss for this one too. I also like simple dressed greens, no garnishes, especially with venison stew. Again, just olive oil, salt and pepper. All look delicious! I usually mix my BBQ sauce with Ranch dressing together for the salad dressing. Makes it a little easier. Just a suggestion. :
