    The Gar is an incredible fish, considered to be a trash here in N America. When I was a kid growing up in Louisiana, we'd eat them. The meat is a little firm. We'd made the French dish, thickened Cubion, and eat it over rice.

      It is quite strange seeing them eat Gar in Thailand as they love fish, and here in the US we consider it undesirable trash.

      Too lazy and ignorant to know how to clean it! Way more work than driving up to McDonald’s drive in window! We don’t know how to fix that salad, or where to get the ingredients! I haven’t heard of gar on any restaurant menu! We would need to import some of their chefs, and build a reputation with enthusiastic customers! Easier to travel to Asia, than find a restaurant that serves this dish! Maybe, with our Open Borders, we will get some good chefs, there should be a bright side, to our dilemma at the Border!

      This also what I find comparing SEAsian and western world
      Is the west you guys prefer something soft, something delicate melt in your mouth, and
      don't like chewy texture that much
      There's a reason why we in SEasia have fish cake, fish ball and all that, fish used for those preferably are chewy and firm fish like alligator gar here, we like it
      Even if you go to Indonesia and ask for meatball, you won't get you typical western like Italian or swedish meatball, the bakso (literally meatball) we have here are like fish cake or fish ball, it's mix of meat and flour like tapioca, so it have some chewiness to it

    Por aca es un manjar tabasco,mexico, lo llamamos pejelagarto, se lava bien con un poco de ceniza de brasas se lava con abundante agua y se pone asar y después de un tiempo en las brasas bien cocido a degustarlo acompañado con cebolla morada picada con chile habanero y unas hojitas de cilantro, todo bañado con limón, unas tortilla de maiz ya sean de fabrica o de mano, provecho, saludos

    Usually these types of fresh water fish have a muddy flavor so this steam ,mash deep fry kills that away and with the various sauces can be very tasty sweet and spicy. "Plah dook foo" is approximately the English pronunciation. And judging by the general comments, most people have either never tried this or haven't the faintest idea of what they are talking about.

      It's a matter of just cutting out the brownish red meat and that muddy flavor goes away. They also steamed it and pulverized it because there are tons of little bones in gar. Another way people cook it here in the states it to smoke it.

    Gar fish is absolutely delicious. In the USA in the South you can only catch 1 per day; that’s the limit. They have amazing hearty texture.

    I used to do research on long nose gar in the Great Lakes. Dissection was incredibly difficult. We would use hedge trimmers to cut through the skin. These fish are incredibly tough, they can even use their swim bladder as a lung if oxygen levels in the water are low allowing them to live in very warm shallow water.

    Well there goes that knife lol. In Kentucky when we filet these we use garden shears. Way more effective and won't ruin your knife

    Ustedes sí saben hacerle agua la boca a uno, es fantástico como desde el comienzo preparan esté rico manjar qué lamentablemente no muchos pueden disfrutar. Los felicito por tan bonito programa. Very nice program, averything since the beginning is exelent how you guys prepare that soculent fish. My mouth was watering very bad just to see the all plate. Delicious, delicioso.     Best way to cut one of them is with snips. We have even used tin snips as the scales are like armor and you'd be hard pressed to cut through them with a knife

    First off as a Cajun from Louisiana, let me give you a tip on how to clean this fish. Nail the head down, then use a sharp hatchet and remove the hard skin and scales along the spine with a hacking motion. Once you get it started, hold on the end and pull down as you chop. Once that's done. Do what you did a peel it away. Trust me, a sharp hatchet is faster and will save your cleaver from hammer damage. 😉

      From a Creole to a Cajun you show know how to clean one the same way I do, they letting the work, work them. I use my cane knife and start at the tail and come up to the head talk about fast.

      For the fish, they haven't prepared it before. (Judged from what they said, as well as the way they did to remove it scale.)
      For the dish, it is common dish in Thai. Even streetside food stalls can do the dish. It is not that unique or fancy dish to be excited. (Walking catfish is commonly used. In fact, I have never heard about using others fish for this dish before.)

      Панцирник, панцирная щука, на видео тупорылый панцерник. Разделали довольно мерзко, не убив живое существо перед разделкой, а просто усыпив его, но у них это норма когда еда в тарелке шевелится и кусается.

      @@sw8969 не уверен, что не убили : тропическая рыба вряд ли перенесла такое резкое понижение температуры.Плюс вся была в слизи - - а это верный признак снулой рыбы. Так же усыпляли арапаиму.Чистили молотком, она явно была уже мертвая.

    I knew that the scales on a Gar were very hard, but didn't know how hard... until I saw this! Gars are an ancient lineage of fish, and those scales are made of an enamel like material called ganoin.

    If you know Thai language, then you will know that they haven't had any experience with this fish before. What they did to remove its scale was improvised.
    The fish may look scary. But they are much more passive than Arapaima (recently uploaded by this channal). They both are popular exotic fish for Thai fish keepers, along with Redtail catfish, Tiger catfish, Peacock Bass and other exotic predator fish.
    For some reason, I have a feeling that the next video may feature one of these fish.

      Gar have very tough scales, it is easier to use garden scissors or metal cutting scissors to cut through the hide.

    The garfish is a long and slender fish with a laterally compressed body, and grows to about 50 to 75 cm (20 to 30 in) in length. The jaws are elongated and armed with sharp teeth.
