I can't help but feel carrot shavings wouldn't survive being honey roasted, they'd probably turn to mush. In my mind you'd want them either julienned or fully sliced lengthways. I guess it depends on how much honey you use?
Hm, you might be right! Though I wonder if you both squeezed out the moisture after cutting them and roasted them on a rack if you could get them to crisp up nicely, then add a glaze on top. That does sound a like it'd result in something more like topping for another dish rather than an entree, though.
