Curry Black Eyed Peas With Plain Rice And Sauted Kale

- Ingredients:
2 cups dried black eyed peas ( I used about two cups once cook)
🍃Add enough water to cook peas and salt to taste
2 and 1/2 tbsp curry powder

1/2 large onion
4 cloves garlic
1 scotch bonnet ( if you don’t have access just omit it).
Few thyme stems
2 stalks scallion
Small piece of ginger grated and 1/2 tsp
Ground pimento 1/2 tsp
1/2 carrot
All purpose seasoning of your choice ( I used natures valley)
Oil
Add additional water with a little oil to build the gravy.
1 head chopped kale
1/2 onion
3 cloves garlic
Oil
All purpose seasoning
2 1/2 cups rice ( I used parboiled basmati rice)
*Wash rice before cooking
3 cups water
Salt to taste
1 tsp oil Хобби

I love black eye peas stew, I soak them overnight, rinse and cook so I can used the water they are cooked in along with coconut milk to finish my curried stew. Delish!

I just made this dish about two weeks ago. I add coconut milk to it too! One of my many favorite bean dishes to make. It’s so good!
Never had it without the coconut milk though. Might have to give it a try real soon.

How did you get the Kale to steam and stay perfectly green?
I constantly stir until I’m satisfied. It took less than 5 minutes. Once the kale start to shrink, remove it from the heat.

I would definitely recommend it.
Bring to boil turn off heat, let sit for 30 minutes you will be surprise how fast these peas cook.
Could I use lentils instead of black eyed peas?
