    Been making this recipe for a year and a half. The sponge method shown here makes the best loaf of bread.TY

      Can someone help me. How many minutes do I wait to see if it bubbles? I have done in the past 1/4 c of warm water 100-110 degrees, 2 tsp yeast, 1 tbsp honey, and waited 10 minutes. This recipe calls for 4 cups of water. Thank You

    Hats off to you. I have had many failed attempts at baking bread. Today I hopped upon your video and thought to try your process, I told myself if I don't get it right, I will give up on bread making, voila... my bread came out so beautifully and high rise. Can't thank you enough. I know I still need to practice, but I am going to get better every try.

    I've been making this bread for about a year now and I think I have just about perfected it. The recipe makes fabulous tasting bread with an open texture and it slices well. I particularly like it toasted with butter and home made Seville orange marmalade. If I had a cow I would make my own butter too. Well done Lester.

    I bake two loaves of bread every week, yet continue to look for perfection via tips and hints that will contribute to "never ending improvement". Lately I've been using a similiar shaping technique to yours, yet in watching yours today even the slight difference in shaping makes it even more simple than what I've been doing. Thanks for taking the time to share your years of expertise. I never buy bread from a store, and can't imagine buying it.

    Makes a wonderful loaf of bread. So good toasted until well done, drizzled with olive oil and a slight dash of salt. I like the sponge technique

    After trying a dozen or more recipes, I found this one. It is by far my favorite....my preschoolers love it too. 45 minutes cooking time brings all the flavors, at the same time this bread is moist. I double the recipe and make a batch per week for our family.

    Thank you so much for this recipe!!! Had been searching for a good whole wheat yeast bread recipe all my life and finally found it. I have tried it twice in the past three days and it turned out perfect both the times. I did add 20% all purpose flour though but still 20% is like nothing for the amazing results I got, for me it still is Whole Wheat flour bread. The bread was soft and perfect.

    This was a very helpful, easy-to-follow tutorial that ACTUALLY WORKED! I followed it closely, watching it on my iPod Touch in the kitchen, pausing it in between steps. Each step of the way, my dough turned out just as suggested. After more time than I care to admit, I FINALLY got a loaf of bread to rise above the pan, and it tastes delicious. THANK YOU!!
    By the way, I did use 5 cups of flour to 4 cups of water, just as suggested, and it was very easy to mix. No overstatement in the video.

    OMG!! I just finished making it and it came out PERFECT! I halved the recipe because I only wanted one loaf and I also substituted agave nectar for honey, although I do have agave, because I wanted to make honey wheat bread and still it rose perfectly and everything came out just like yours and it tastes like heaven too! This is my first bread and no screw ups! My kitchen smells like a professional bakery and all :D Thank you so much!

    Made this recipe yesterday(3 Oct 2014) and this was the most like store bought for consistency of any loaf I"ve ever made. A bit more work than most others but definitely worth the time.Very good flavor. TY

    Thank you so much for this wonderful video! I've been trying to make buns and pretzels with the instant dry yeast. They tasted horrible (had a really weird smell) so I had to throw away everything. I bought another active dry yeast to give it one more try. My bread tastes and smells incredible!!! It's just like store-bought and I know why other people are all happy with this recipe. It's even the healthiest bread I've made / seen.
    For my bread, I used the water at room temperature so it took an hour for the first rise (they didn't start rising until like 40 minutes passed so I almost gave up). After the first rise, second and third rises were quite fast and the rising time matched your instruction.

    Thanks so much. I was doing the kneading all wrong and this video finally showed me the right way. The dough seemed wet, but my loaves were successful!

    This is a really good method. I've had such good success with it rising well. My problem before would be when rising in the bread pan, it would either not rise high enough or it would slightly collapse before baking if I would let it rise higher. This method solves the problems completely. Great bread to eat fresh from the oven and makes the best ever toast the following days if allowed to get good and browned. Thank you for this information. I have been baking bread for over 50 years.

    My husband loves this bread more than the fancy organic grocery store bakery bread. It's so easy! I tried to make bread over the years and could never come up with anything decent. I never make anything but beautifully consistent tender, delicious loaves now, without all those air holes. Thanks Lester!

    My three year old daughter and her nanny here in Newfoundland make bread every Sunday - hand made but using bread and roll mix :)... it is such a cute tradition and I hope to carry it on with my two daughters for all time!!!

    @GreenGrenchWookie I have to say that after many years of making bread in a bread maker, I went back to doing it by hand. Far superior product, more in touch with the process. On time is only about 15 minutes more as the cleanup from the breadmaker takes time also. I highly recommend testing the difference.

    Thank you so much! What an awesome instructional video. Not the luckiest with whole wheat bread but trying a lot .I've tried the sponge method from tassajara but must be messing it up somehow. Have tried other non sponge whole wheat recipes like yesterday, mine tasted great but it's low to the ground. Loved the kneading tips. I also mix with a wooden spoon and knead mine by hand but you had good tips on using a lighter hand with the dough, and being careful not to break the dough. I'm tough on mine.Plus the shaping. Like everyone else, I roll it out, then roll it up. I end with sub par rising bread that barely reaches the top.I suspected something was wrong with the shaping as the dough would rise perfect until shaped and placed in the pan. Never thought about forming it into a ball first as I do with other breads in a cast iron skillet. Will definitely try this recipe this week. Thank you so much. Great video!

    It depends on how it has been stored. In a dry cool place, many months. You can taste the flour, roll it around in your mouth and see if it has a bitter taste. If the taste is still slightly nutty with no burning or bitter sensation, it is still useable.

    Great instructional video and recipe. Successfully made my first loaf of bread in my life on my first attempt. I tweaked some of the ingredients, used 1/2 wheat and 1/2 rye flour, coconut oil instead of olive oil, etc... Thanks again.

    @goolden1 Very glad to hear that the video has helped you with your bread making. You can add other flours to this recipe including all purpose, rye, or spelt. The all purpose flour will make the loaf lighter but not as nutritious since the germ has been removed. Let us know how it turns out.

    thank you so much for sharing this. I just made my first whole wheat loaf..and they turned out great! I just have question on what im suppose to do next, do i let them cool then place them in a bag or container. And or do i place them in the fridge to keep fresh. I want to avoid any mold ...although my family already started eating a loaf. I also wanted to know the shelf life. how to keep them fresh longer. Thank you again. super excited about being able to make healthy bread for my family!

    I made this recipe. I made many beginners mistakes though I made bread several times. In fact I have made this recipe before and enjoyed it. Yesterday I milled my own flour, and followed this recipe. My first loaf was amazing chewy and flavorful. The second I have not tasted. Because I milled my own flour, I added vital wheat gluten to ensure I had enough gluten. About a quarter cup for each loaf. Also the dough for both loaves is too much for my kitchenaid. So I kneaded it a few minutes and divided my dough and kneaded this dough in halves. Along with hand kneading With these modifications I made amazing bread, even tough my kneading techniques were all wrong, and I forgot to cover dough while it rose.

    Excellent recipe. Can i form this dough into a boule and bake the same way or will it flatten out a lot?

    @genopsyism Usually 40-50 minutes in a 400 degree oven will cook it all the way through. If it does not, you may want to get a thermometer to insure the oven is the right temperature.

    @16hilltyKMS Both would work as long as they are ground from hard wheat kernels (they could be hard red wheat or hard white). If your white whole wheat flour is made from soft winter wheat then don't use it as it has too low of a protein content. That flour is typically called whole wheat pastry flour works great in cookies, muffins or cakes though.
