  • Beggar’s Chicken/叫花鸡, the essential technique for this recipe is taking advantage of steam. Here are some tips for your reference:
    1. Buy fresh chicken or ones not long frozen in your fridge before. Moisture in the fridge will form tiny icicles on the chicken which pierce into its muscle, resulting in drier meat;
    2. Rinse well and change the water a few times to remove the raw chicken's odor. Remove any excess moisture before marinating;
    3. Use a pot with a heavier lid that seals better. By sealing with a small dough, the steam is trapped inside the pot, which increases the efficiency of steam cooking and keeps the chicken's favor from being lost in the environment.
    4. This recipe can be made with aluminum foil only if you do not have a lotus leaf available.

    light soy sauce 40g (3 tbsp)

    salt 6g (1tsp)
    water 120g (½ cup)
