- Beggar’s Chicken/叫花鸡, the essential technique for this recipe is taking advantage of steam. Here are some tips for your reference:
1. Buy fresh chicken or ones not long frozen in your fridge before. Moisture in the fridge will form tiny icicles on the chicken which pierce into its muscle, resulting in drier meat;
2. Rinse well and change the water a few times to remove the raw chicken's odor. Remove any excess moisture before marinating;
3. Use a pot with a heavier lid that seals better. By sealing with a small dough, the steam is trapped inside the pot, which increases the efficiency of steam cooking and keeps the chicken's favor from being lost in the environment.
4. This recipe can be made with aluminum foil only if you do not have a lotus leaf available.
【Beggar's Chicken Recipe】
Chicken:
whole chicken 1400g
light soy sauce 40g (3 tbsp)
dark soy sauce 12g (1 tbsp)
salt 20g (1 tbsp)
Huadiao cooking wine 12g (1 tbsp)
Sichuan peppercorn 4g (1 tbsp)
five-spice powder 1g (½ tsp)
ginger 35g
Chinese green onion 20g
Dough:
all-purpose flour 250g (1½ cup)
salt 6g (1tsp)
water 120g (½ cup)
Others:
dried lotus leaf 1 piece
aluminum foil 2 pieces

There is no such thing as copying someone elses recipe.... all recipes originate from one recipe and people make slight variations to it and making it their own. Whoever says anyone is copying someone elses recipe has no idea what they are talking about.

叫花雞⋯這個名字錯誤。正確來說是「叫化雞」,叫化指乞丐,以前用泥裹著荷葉包雞去燒的⋯

天啊~ 撥開雞肉那一霎那,我餓了~ 好一個摩登叫化雞
我想如果雞肚子裡頭塞了糯米和莲子, 一定也能吃得不得了
因为从原理上讲这种做法半蒸半烤,所以鸡肉本身的汁水保留的很好,也能吃到鸡肉本身的香味(没有散到烤箱里)。里面可以塞上喜欢吃的料,香菇、糯米、虾米等等。之前还做过一期“参鸡汤”,里面的糯米特别好吃,欢迎收看。

你好,浸泡之后,有一点淡淡的荷叶味。直接用味道会重一些。我喜欢浸泡然后洗净来用。

你好,花椒的话,你那里的Superstore有没有?花雕酒是一种烹饪用的料酒,中超调料货架上都有的,不是饮用的那种高度酒。荷叶不是成败的关键,荷叶主要是风味。我以前做过只用铝箔纸包的,也没问题的,做出来的鸡肉的状态相差不多。不用荷叶,只用铝箔纸包紧就行。
