    Fried okra, cream corn, sliced tomato, and corn bread....... you talk about a good meal! It's one of my favorite meals when it's all fresh from the garden or your own canned food.
    Thanks for posting this Wanda! This video made me hungry! LOL

    Wanda, looks like you did a great job on the canning process! And it looks like you turned the table on me (remember when I was visiting you, you had Danny and me taste testing your Cane Cookies) by taste testing this method of canning okra. When I saw Danny tasting the canned/fried okra and that he liked it made my day! I could just visualize jars of canned okra sitting in your storage cellar!
    I so hope you are doing well this morning. Thanks

    I've been meaning to try OAG's okra for a couple years now and went to his channel. His recipe seemed a little different than yours...kinda confusing though. Anyway, I went with yours and put up a couple quarts. They turned out great. We don't have a freezer, so I hope to be puttin' up lots of okra this way.

    Love OAG's method for canning the okra. More of a canned brine but it works great. He cuts his really thick. I do mine thin. That way I can also use them in scrambled eggs as well. (fry them up for 5min then drop in the egg mixture and tossed altogether, serve.) Great additions to soups too.

    Wanda I wanted to let you know how much I LOVE how clean your work area is. Yes, I know that sounds odd, but I so need a clean environment when working with food items. Seeing how careful you and your husband are when working in the kitchen gives me great joy. One thing I am different on is I either pressure can or hot water bath can according to the Ball Blue Book.

    • @DeepSouthHomestead
      @DeepSouthHomestead  8 лет назад +4

      We are very clean when it comes to handling food things especially canning. One little germ could cause the food to spoil in the jar. With the vinegar and salt and boiling it for 8 minutes, there is no need to water bath. In the Ball book it only calls for salt, so you do water bath it. Thanks

    • @OldAlabamaGardener
      @OldAlabamaGardener 8 лет назад +4

      Misty, I am not Wanda, but I think she will be okay with me answering your question. First, I don't think it will work and here is why. When you take frozen okra out of the freezer, as it thaws out, it is going to get soft and if thawing didn't make it soft then the boiling would. What you would end up with is a jar full of mushy okra. Now, having said that, you could try it with just one or twi jars to see what happens.

    Is it 2 1/2 or 10 1/2 quarts of water and 2 quart worth of okra I wish you would’ve shown how you made the breading and did you squeeze the excess water or Do a water press before you did the frame. Thank you for posting.

    Morning Wanda, do you still can your okra? How did it taste 6 months after canning or one year after canning. Thank you for your reply.

    My only experience eating okra was years ago. My then mother in law opened a store bought can and used it to make a rice dish. All I saw was slime and goo. Yours did not look like that at all during the canning process and definitely not when it was fried. How did you avoid the sticky results? I think okra is good nutritionally and I'd like to try it again.

    Ms. Wanda quick question. When you drain the okra for frying do you rinse it off. Or just drain and coat it. And do you start your 8 mintues on the timer from the time you drop the okra in the boiling brine. Or 8 minutes from the time it come back up to a boil. I'm getting ready to can this today.

    Great video. I am puzzled why you didn't either water bath or pressure can. It isn't necessary. Thanks for sharing.

      No further processing is needed. The salt and vinegar are what keeps it from spoiling.

      OldAlabamaGardener Thank you. I can see where the salt and vinegar preserve it. I will definitely give it a try. Again Thank you for sharing good stuff. :)

    Wow! I too would like to know if I can can okra that I already froze this year.

      Cheryl, I'll give you the same answer I gave Misty above: I am not Wanda, but I think she will be okay with me answering your question.

      I am with OAG, but we are going to try to can some from the freezer next week and let it sit for a week. So we will let you know the results in a couple of weeks. Thanks

    Oh Wanda and Danny it was pure torture watching you eat that okra! I have to find me someplace in Washington that grows it or I might be hitch hiking south! The last time I had okra was when I visited my Uncle in Louisiana and that was 15 years ago.
