Easy Sponge Cake without Butter or Dairy Recipe

  • This is a simple sponge cake recipe without butter or milk. This dairy-free cake is so easy to make you can do it by hand without a mixer. The advantages of an oil-based cake are that it is light, moist, easy to make, and delicious. Oil cakes are cheaper than butter and you can make this cake for those with milk sensitives or allergies. You can also flavor it with any extract of your choice. What’s not to love?

    Recipe tips:
    Baking times:
    Bake all cakes until toothpick inserted in center comes out clean and center reads between 200F (93C) and 210F (99C.)
    The below times are approximate as each oven is different. Start at the lowest time and check every 2 - 3 minutes if not done.
    9×5" (23×13 cm) 45 - 55 minutes
    For a 6- 8″ (15-20cm) pan, bake approximately 35-40 minutes.
    For a 9″ (23cm) cake pan, bake approximately 25-30 minutes. This will be a thin cake.
    For cupcakes, bake 15 - 20 minutes.
    To make a dairy free frosting, try out one of these recipes! Cool cake completely before icing.

    If using a darker pan, reduce temperature 25F (4C) and bake an additional 5 - 10 minutes to prevent over browning.

    my daughter has a dairy allergy, but my wife an I really wanted to do a cake for her 1st birthday. thank you for this video, we now have a great idea on making a smash cake !

      A smash cake will make fun and memorable photos. I hate that your daughter has a dairy allergy. I make a lot of desserts without dairy because I can’t tolerate it. There are a lot of great recipes out there that are dairy free and most recipes asking for milk or butter can be substituted with non dairy products.

    3 eggs
    2/3 cup oil
    1 tsp vanilla
    3/4 cup sugar

      I’ll give you measurements of the two dairy-free icings I use plus a link to the full recipe if you need more details.
      For a margarine icing:
      2 ½ cups (312.5g) powdered sugar
      ½ cup (113g) softened margarine
      1 tsp (5mL) vanilla
      1 tsp (5mL) milk, juice or water
      ½ tsp (2.5mL) vinegar

      For a shortening based icing:
      3 cups (375g) powdered sugar
      ½ cup (96g) shortening
      2 tsp (10mL) vanilla
      1-4 tbs (15-60mL) water

    Miss Maggie has a sweet tooth, doesn't she? Bless her, she always there for the sweet recipes too. Raymond & Jackson seem to show up for the bread mostly 🤣 This recipe looks really easy. And no dodgy ingredients to worry about like with a box mix. 👍 Excellent! Did you say the batter will fit in a loaf pan? I don't normally make layer cakes. Don't ask my why, but the husband doesn't care for them. 🤷‍♀️ Bundt cakes, sheet cakes, loaf cakes and cupcakes but layer cakes he will pass up unless that is all there is. Fine with me because a layer cake is messier than the others. LOL

      Maggie totally has a sweet tooth! I give her tiny bites as it’s not the best thing for her to eat sugar. And totally the other dogs love the bread more. 😂😂 Yes, I make this recipe 99/100 times in a loaf pan. It takes around 50 minutes give or take 5. Normally we eat it plain or with a lemon or milk powdered sugar glaze. Sometimes I will sprinkle a layer of brown sugar and cinnamon on top.

      A moderate oven: 350F, 180C or gas mark 4.

    Is it mandatory to use vanilla extract?

      No, it is not necessary. You can replace it with any flavor. You can also leave it out entirely. However, it will be sweet tasting but no real pronounced flavor if you don’t replace it with some flavoring. Hope that helps.

      I’m down to three older girls. I was so excited to get enough eggs for the cake recipe. ☺️ There is no shame in semi-homemade. I say make what you can and supplement the rest. I really like the pie shells you buy refrigerated near the eggs.

      Since you’re asking and I haven’t started yet, I’ll make it in a loaf pan and see what happens. May take a couple tries to get something similar to a red velvet cake but I have an idea that may work. I’ll keep you updated regardless how it turns out. 😂 Can you get crisco or a vegetable shortening in your area? Might have an idea for a frosting as well.
