Well done Dominic. Thank you for the updated procedures and also clarifying how much tylose powder you are using. Very helpful. I'm anxious to try my onlays that I was having difficulty with again. I have to admit, watching you quickly remove your onlays made me cringe because I have always slowly removed mine with the onlay curled backward away from the design as I roll it back in case I had to do a rescue for something that stuck to the mold. On that note, it would be interesting to see what, if anything, can be done if you do have a problem where the onlay sticks because from my experience, it leaves an indentation and a colored mark (based on the color used for the onlay) on the cake. This is the part that makes me the most nervous because I'm not certain how to rescue a situation like this after getting to this point with a cake. Thank you again for your video! Well done!

It sounds to me that your sticking problem is the result of the condition of the fondant. It seems that the surface of the fondant that is pressed into the Silicone Onlay has a tackiness to it that is working against you. Firming the fondant by adding Tylose powder (CMC), using a pounce as I demonstrated in order to apply micro layers of cornstarch to the surface that goes into the Silicone Onlay, and lastly stretching the Silicone Onlay in order to release the pattern and allow air to flow in between the surface of the Silicone Onlay and the fondant. Here is a tip: When stretching, you should see the pattern popping up out of the Onlay and then settling back in. If you do not see this happening it is a good indication that you still have a tack issue. If you are still having problems I would suspect that perhaps you are microwaving the fondant to soften it, which is okay. But I would hand soften by kneading it. Microwaving to soften fondant is great but it does warm fondant by exiting the moisture in it and maybe that is why your fondant is so sticky. Love your cakes, by the way! - Dom
+MarvelousMolds Thank you Dominic. I do not microwave my fondant. I had been actually rolling my silicone onlay over the center divider of my kitchen sink which works well to push from the back on all parts of the mold (in addition to stretching it every which way.). I did add some tylose but also found that if too much tylose was added, it made the fondant too firm and made it then difficult for the blades to come through. I'm not sure exactly what is the issue but am willing to try with the fondant smoother vs. the roller to see if that may be of help. Also, the video was helpful to show how much tylose you are using. I'll keep you posted!
