As an Arby's employee, I can say that almost everything they did was wrong, wrong, wrong! My managers would not let you continue working back line if that was your standard work and habits. And not taking the beef temp? Putting the beef on upside down, with old meat? Toasting both buns on the crown side? What's wrong with you, lol? And don't even get me started on the cup...
Yeah even a General Manager could not have someone that doesn’t work for the company come into the kitchen area and record, that is definitely not allowed. Cups are 100% not allowed by employees near the food (at my store we enforce no cups at all, we only allow cone cups that get discarded immediately). Roast Beef is cooked for 3-3.5 hours not 48. Stuffing the old leftover beef from the previous beef into it to prevent waste is gross, we always throw it away. That’s not enough waste for any kind of food cost paperwork to come up short anyways. The sauce on Beef N Cheddars is Red Ranch or Super Sauce which is French / Catalina dressing (which my entire state doesn’t even put red ranch on the BNC’s because most people don’t even like it.) And then idk if that’s really how they’re supposed to do a beef change, with a mobile pan but that’s not how my store does it or the 6 other locations I’ve worked at. Freezer is a disorganized mess as well. Store definitely needs more attention from their general AND district manager..
We use a mobile pan to carry the beef from the holding oven to the counter, I don’t know how you do it but that’s how we were taught. I agree with everything else 😂

To be fair. Not all arbys restaurants look like that. The store that I work at is very strict. Every time we have time to clean after a rush we do it. We do not put old roast beef with the new. It is very strict here.

I work at arbys as a manager beef has to be tempered to 34°F before cooking it, and it only cooks for 3-4 hours hold time on a cooked roast is 48 hours it stays in a hot hold for 30min before it's supposed to go on the slicer. In this video the beef I'd being chipped because the slicer is not sharp enough or its turned down to thin, it is supposed to be wafer thin. Who ever runs this store should be fired so many health and company violations can be seen in this video

El Mejor The ideal temp is 165, but for all real purposes, anything between 140-150 is fine. Any meat below 130 on a slicer should be immediately discarded.
I heard that the beef starts as a big bag of goo and liquid and that it doesn't form until cooked. It's the only reason im here. I had to see for myself, and that definitely looks like it was once a big bag of goo.🤢🤮

One time we didn't have enough ready and the manager made me put a roast on the slicer that wasn't done when i pulled it out blood squirted up and out about a ft high. Yea he was panicking then. Don't eat there soon before closing either,they will pull sht out the garbage can.
