How to Build a DIY Dining Table & Benches

Assemble your table base upside down on a flat surface. After cutting your aprons and legs to size and drilling pocket holes, attach a long and short apron to one leg. The outside face of the leg and the outside face of the aprons should be offset by about 1/4 inch. Use glue and pocket hole screws to secure the parts.
Add a second leg to the short apron, followed by the remaining long apron. When those have been secured, add the remaining legs and short apron.
Flip the table upright and cut 4 corner braces that will reinforce the leg joint. Glue the braces in each corner and secure with screws. Drill pilot holes and drive screws and washers into each leg.
Cut the stretchers to length, drill pocket holes, and install between the long aprons by attaching with pocket screws. Cut the top slats to size, sand, and apply stain and clear finish. Place the two scrap boards in the floor and place the top slats with the best face down on the scraps. Make sure the ends are flush.
Center the table base on the slats and secure them with pocket screws. Complete the table by adding furniture glides to the bottom of the legs.
To make the bench, make the end assemblies by cutting a 6 degree angle on the top ends of the legs. Place them on your bench with a 1/4 inch spacer between the legs. Center the leg brace on the legs with the bottom flush and trace the angles of the legs onto the brace. Remove the brace, cut the top shape with the jig saw, center the brace back on the legs and secure with screws.
Secure a stretcher to one of the leg assemblies with glue and screws. Add the remaining leg and stretcher. Cut the seat slats, sand and finish. Position the first slat on the bench. Secure with pocket screws. Add the second seat slat and screws.

I just made the benches for my thanksgiving table I built. They came out really nice but remember that depending on size they are a little heavy. I made mine counter height and 4 feet long with 2x10 lumber.

Pocket screws to attach the table top are convenient, I'll give you that (I do use them for other projects). However, I would expect that table top to warp over time with changes in humidity. There are better ways to join wood table tops than this. Also looks like no attention was paid to orienting the end grain of each table top board. Usually you alternate the end grains like this: frown face, smiley face, frown face, smiley face. Lastly, unless you joint the long edges of the boards and edge glue them, I would expect a lot of crumbs and food debris to catch in the gaps between the table top boards. That would be a bear to keep clean. I do love the look and function of the V-shaped benches and also the dark on light stain combination, so my comments aren't all negative, lol.

Lowe's Home Improvement do I have to use pocket holes cause I don't feel it's necessary
Do NOT screw a table top to the aprons with pocket hole screws. You are just asking for trouble when the top wood moves due to moisture changes. Z-clips or table top fasteners are what you need to use.
I thought the point of pocket screws were to allow the wood to expand and contract with moisture changes.
Nope, they're just a quick way to joint 2 pieces of wood. They are super convenient and useful for face frames, or joining pieces where the grain is going in the same direction. But in this case, the table top wants to move sideways but if it's screwed to the aprons it can't, so it will warp/crack. It's not guaranteed to happen if the environment the table is in never changes humidity, but it's likely to.
I really don't know much about woodworking, so I could be wrong. But with a pocket screw it's going with the grain and therefore allows the wood to move along the screw as it expands or contracts. But with a typical screw joint, you're running it perpendicular to the grain so the wood is hitting up against it, and the tension causes it to split. It's like the difference between a ramp and a wall. You can move up one but not the other.

will this be strong enough to hold a concrete slab top? maybe 1" to 1.5" thick?

How much would it cost in lumber to build this ?
How do I keep the aprons from moving when attaching them with pocket holes if they're offset by 1/4 inch? Mine keep moving so I have to remake the leg
I use 1/4" square dowel as temporary spacers for projects at times. They are like $2 for a 3 or 4 foot long dowel. Cut them to length so that you can easily knock them out after you've joined your boards.

you could just screw from the top of the table and use wood filler and sand it down
How to fix a wobbly table which has even legs? It vibrates side to side (in both ways) when i even try to write something slowly on it. It looks like simple Ikea office tables..
