And on the topic of the ratio of chutney or sambar to dosa, I would recommend as said your instincts but a better way is to see how strong their individual tastes are since sometimes I just drench it in there if I don't feel like tasting the batter or just touch it because the chutney is too strong
Rasam is not a soup kind of dish but u can take it as a soup ... But most of our Indian prefer eating it with plane white 🍚 rice .... U must try it u love it 💓

The ratio is simple, the taste of chutney or sambar shouldn't overpower the taste of idli or dosa because the chutney and sambar are mostly way too spicy than the batter used to make idli/dosa. Nice video & good job.. ✌️ There is a secret behind the process of dipping - it is based on the consistency (of Sambhar, chutney whether it is too watery or not) & thickness of the dish (idli, dosai, uthappam etc.,) you have to dip in such a way that the dish is not too soggy (when dipped too long) nor dry (not fully dipped). I prefer Vadai's to be dipped so long in the Sambhar (so it becomes Sambhar vadai) and feels like heaven when tasted 😋..

As a South Indian with a huge beard, i can say this guy’s doing a mighty fine job while eating sambars and chutneys and rasams without spilling.
I am a South Indian! Just go with Sambar and Chutney together for both idli and dosa. It goes really good.😋
