    I’m not a professional fish filleter by any means but I do manage to do a reasonable job of getting the fillets off.

    Been fishing all my life but always worth watching how someone else does it.
    I too like wide-bladed knife and most of the time I use a boning knife on larger fish, it just works,
    I never dodge the fish cleaning chores, I always think a decent fish deserves good treatment and I think it just shows a little respect somehow. I am not too shabby with the knife and can usually get the job done reasonably quickly , and like you, without leaving too much on the bone to go to waste.

      I most definately agree, a fish deserves to be treated well, much better on the table too.
