Sounds like I am on the exact same laptop you are. But the way I am viewing it is I got almost 10 years with little issue, so I'm willing to spend more to get a few extra years out of my system while getting more performance today.
Will I be fine with gaming on the 14’? Or will the better air flow on the 16 make a huge difference? I’m going to have it connected to an external monitor so I’m not worrying about size.
If your use case requires dedicating a lot of ram to the virtual machine, then it might be worth to go 32GB. However, I do think its an expensive upgrade, so if you aren't sure if you need it, perhaps try the 16GB first from a place with a good return policy and then exchange it if it doesn't work for you.

I'm not familiar with what kind of software you'd be using in architectural studies, but I'd suggest getting a cheaper base model first from a place with a good return policy and trying it out yourself to see if it will meet your needs. If it doesn't, then return it and get something more powerful.
I'm an editor, and just wanted to know if getting the base model of the 14inch 10cpu and 16gpu 16 ram 512 storage is good option or just wait it out and go for the 16 base, ofcourse the issues here is the price but would it make a difference, I'm ok with the 14inch display and speakers etc just wanted to know about the internals if they would make a difference.
I would generally recommend sticking with the base model unless you KNOW you need an upgrade for a specific reason. Perhaps you can buy from a place with a good return policy so you can try out the base model and see if it suits your needs?
Mainly that you won't be able to get as much performance out of the Max on 14" compared to 16". Otherwise, choosing it for the monitor support seems like a fine reason.

Would you recommend to buy M1 pro 16gb or 32gb(not max). Mainly for heavy multitasking and coding. Perhaps running windows 11 parallels.

Going Max with the 14" if you need the RAM but hate the weight could be a great reason. Hope it will serve your needs well!
