  • We’re in the kitchen with content creator and all-round food-lover Katie Pix as she creates a simple yet delicious Mediterranean chicken tray bake, inspired by her fiancé Simon's Italian family.
    This recipe uses potatoes, onion, garlic and fennel but you could add in whatever veg you have in the fridge - carrots and red onion work well - or raid the store cupboard for a tin of chickpeas or sweetcorn. To enhance the Mediterranean flavours, Katie adds in capers, fennel seeds and olives as well as a tin of plum tomatoes to create moisture. You could even make a vegetarian or vegan version without the chicken. Sprinkle with fresh basil and serve with warm, crusty bread.

    Ingredients:
    500g baby new potatoes, halved
    2 tbsp olive oil
    1kg essential Waitrose British Chicken Thighs
    1 onion, cut into ½ cm slices
    1 bulb fennel, cut into ½ cm slices
    1 tsp fennel seeds
    ½ tsp dried chilli flakes
    4 garlic cloves, sliced
    400g can of plum tomatoes
    1 tsp capers, drained and rinsed
    85g mixed pitted olives
    handful fresh basil leaves
    Crusty bread, to serve

    Onions and chicken, I think they always go well. The sweetness of the onion enhances the taste of the chicken

    Personally I would have browned the chicken skin side down to give a bit of char flavour, however, a good presentation overall.
