No Fuss Oven Baked Lemon Chicken Tray Bake!

- I think you'd be hard pushed to find an easier dinner than a good old tray bake. Short of getting a takeaway, this has to be one of the easiest meals you can make for your family. With my lemon chicken tray bake you just chuck all the ingredients onto an oven tray, mix it all up and bang it in the oven. less washing up, no stress and it tastes banging!

To make my oven baked lemon chicken tray bake you will need:
Feeds 4-5 with sides
►800g of new potatoes
►5 chicken legs
►2 lemons
►1 large brown onion
►6-8 garlic cloves
►3 bay leaves
►2 tbsp of tarragon
►2 tbsp of dijon mustard
►3-4 tbsp of olive oil
►Salt & pepper
Serve with some extra veg or a simple dressed salad

Hell, yes. Did this forever ago using a big pack of drumsticks and it’s lovely.
You’ve improved it in my opinion by adding mustard and updating it to a baking tray, well DONE young man.
The mustard is fab, Gives it a little zip and heat

Hi Adam, made my lot something similar late Saturday instead of lemon I used BBQ Sauce…went down a treat along with Chips cooked in my newly acquired air fryer. I fancy using lemon with the herbs a completely different taste. Thanks for the recipe and I hope you are doing well?

A fabulous healthy meal for around £2 a portion, can’t go wrong.
Yep, thankfully chicken is still pretty cheap for people. In normal times I'd be arguing for spending more and getting better quality better reared meat and poultry. But folks are trying to survive and do the best they can. I've heard there's been a return of scurvy and rickets in hospitals as well. It's awful

I think I’d score the chicken, mix the oil, lemon juice, mustard and tarragon and then pour it over the dish.
I might blast the spuds for 15 minutes first too.

Lidl are doing a new "kebab wrap bread" other than a kebab what else could you recommend to do with this awesome tasty treat, its about A4 size and a bit naan ish, I put some home made curry in my first one, lush ! Comes in 2s so got a spare one now. What to do with it ???
So is it like a naan but in an A4 size? Sounds like a great vessel for all sorts. A breakfast wrap with bacon, egg, sausage and has browns with hp sauce. You could do some spicy grilled chicken and stuff that in with salad and some sour cream. Gyros, souvlaki, heck I'd stuff some leftover Bolognese in it with salad and cheese!
Let's see it then, get down to lidl ! I like the idea of a breccy wrap. The possibilities are endless, love the channel btw, maybe get a shout out next vid ? Take it easy bud.
Some added carrots might be nice

Looks good but organic, free range chicken is not cheap :) Neither are organic lemons.
These were just ordinary chicken legs, not organic. But yes if you buy organic, they'll cost more

Lemon Chicken is pretty hard to beat, whether it's a tray bake or bbq'd.

It Looks absolutely delicious mate.
Personally I would've Zested the lemon after rolling it and rubbed the zest with a little salt and the tarragon into the chicken skin.
But hey, it's your recipe.

Winner! - oven tray cooking is always fab! I'd swap out the lemon for balsamic or white wine vinegar and some sugar sprinkling for a sweet/sour combo; also I looooove courgettes/tomatoes with potatoes/onions with chicken (usually thighs cos they're cheapaschips). Adam done good to show how important the herbs/salt/pepper is - essential! Without it there's blandmisery.
So many ways you could adapt this. I like the sound of your version mate, well done

It's quite subtle, you get a lemon flavour but it mellows out and mixes with the garlic and olive. It's very good

I noticed that you rolled the lemon to get more juice out, although I seem to remember seeing somewhere that you can also put them in the microwave for a few seconds.
A good tip for lemons if you are not going to use the skins is to remove the zest (preferably with a fine microphone grater) and freeze for later.
A little fine zest added to a plain bun or cake mixture just lifts them without being overpowering.
You can do the same with your oranges and limes.

Heat can be a factor, I killed my bayleaf tree because it got too hot for it. Easy herbs to grow are thyme, rosemary and parsley.
Iv switched to sunflower oil I use to use olive oil for frying (honestly can’t tell the difference )but I’m not paying a fiver on principle for a bottle !!!L Sunflower oil even in M&S is £2
I very rarely fry with olive oil. Bake yes, fry no. Rapeseed oil is a fab alternative and a lot less in price

My problem with traybakes is that I always find the potatoes don't cook properly.
That's why I use new potatoes or salad potatoes and cut them in half, and they cook fine. A variety like a Charlotte would be great, but any small new potato will work

@@Adam_Garratt I made a few slight changes, 1, not keen on lemon so left it out, and 2, just tossed some mixed herbs over, chuck thighs, spuds, onion, garlic, o.oil, it was delicious even though hubby doesn't like thighs, prefers chuck fillets so will do that next time. I loved it, but maybe 40 mins is too long in my oven as everything shrank a lot. Other than that I can't fault it. I'll cook this again. Yum. Many thanks.

It's quite a saucy dish this. What you can do if you want a little more is add some chicken stock to the tray about halfway through cooking
