- During the month of Ramadan, the most popular restaurant in Hyderabad, India, is Pista House, which builds a massive makeshift kitchen that can cook 200,000 bowls of haleem every day.
In Hyderabad, haleem is the go-to meal for Suhoor, the morning meal before the day's fast, and Iftar, the evening meal that breaks the fast.
This thick and creamy stew arrived in Hyderabad from Arabia in the 17th century. In Arabic, it's referred to as "harees," which means "to squash" and accurately describes this hearty dish that is pounded by wooden mallets until it achieves its rich and gooey consistency.
Since its introduction to Hyderabad in the 17th century, the dish has steadily evolved into something distinctly Hyderabadi. While it is still made with traditional ingredients like goat and wheat, and pounded with traditional wooden paddles, Hyderabadi haleem has a distinct flavor that combines ample amounts of ginger, garlic, masala, and ghee.
In 2010, Hyderabad haleem was added to India’s geographical indication status list, a list that both acknowledges and protects the provenance of haleem and prohibits the sale of products labeled "Hyderabad haleem" if they're not made in Hyderabad.

People complaining about 'sanitary conditions' should observe that the products all look fresh, spices are clean and anti-bacterial, all food is cooked at super high temperatures. It's quite fascinating to see the whole large-scale process.

@@mynameismaomaothe spices are Sun dried. No bacteria or fungi will survive in intense Sun heat. And you throw those spices into boiling water.
So its basic common sense that spices are not contaminated by bacteria.

Clove, garlic,cinnamon,oregano etc.... Are know to have anti bacterial properties. Simple Google search would have give you the info.
As the above comment talked about sanitary conditions I talked about spices being anti bacterial in that way in my previous comment.

People who didn't taste the true authentic hyderabadi haleem can never understand it's craze. It depends on from where you are getting it, and what type of haleem you like too.. Like some places have spicier, some have 'dry', some have less taste, then there's chicken haleem apart from other meat too and a few places sell veg haleem too. You can make it at home however you like in less proportions too. It's served in hyderbadi weddings and such events too. But the best one is definitely which we get in ramadan time, it just tastes different 🤤 and once u taste it you will keep coming back. It's my most favorite food dish just above hyderabadi biryani ofcourse.

Pista house Haleem is the closest we in India to get the best mutton dish. The whole dish is so rich and flavourful, I don’t think anything else can come closer to this. Having this in Ramadan beats everything else.

I have eaten Pakistani haleem and Delhi and lucknow haleem. Dozens of times from many many places.
It doesn't even come anywhere close to Hyderabadi Haleem. Your haleem is harissa with just few ingredients and is mainly wheat. Where as the quantity of meat in Hyderabad haleem is much much more.
At last making of haleem on food insider, my wish came true. Haleem is the best. Not only pista house there are several other restaurants throughout the city which make haleem are great too.

How are they both dependent on each other? Workers could start projects if they had funds for it, for example if there existed a state which did the bidding for the working class. Then we wouldn’t have to have some one who takes the surplus value that we the workers produce.

It's a very sticky and thick form of Haleem but you can make a watery version of it at home which is really good. Guys you don't get it. It's the ultimate dish. It's a privilege to eat it during Ramadan because how much work goes into it.

Interesting. I’ve only had halim brought in by my Iranian and Afghani colleagues. Much different and made with shredded turkey and topped with sugar and cinnamon. Resembles something more like a porridge and served for breakfast.

@@f4k3gamer I have had Alfa Biryani some years ago it was good then but somehow it doesn't taste that good now. I had pista house biryani at tolichowki and I believe in Gachibowli and areas beyond it changes taste according to the people living in those areas
