I can see how they can be sweet. But I was taught by my sis in law to cook them a la St. Croix. She's Cruzan. We've visited St. Croix twice. The first time was for the wedding, the second time was to stay in their house while they were on a staycation. We all went shopping the day after we landed, and she educated us on Plantains. Had only ever seen tiny ones here in the states, but theirs are HUGE! So are mangos and I can't recall what else was twice as large for half the price we can get whatever it is in the states. Of course, milk, bacon, cheese is super expensive because it has to take quite a trip to get there. In St. Croix, they're more on the savory side, smashed, and fried, finished with salt and pepper. It almost seems sacrilegious to the St. Croix roots, but I may just try this. Looks yummy.
