    Is there is an alternative for the condensed milk and evaporated milk for the dairy free people? Not me personally, I just figured since you mentioned a dairy free variation earlier, that this would need one too. Or will you just serve without so it's more traditional?

      Yes! Believe it or not, the most common non-dairy substitute is Coffee Mate Creamer! And don’t worry, it’s actually traditional in Taiwan, especially for bubble tea!

      agave. its a time of sweetner from a cactus. its still sugar.

      It’s probably healthier than white sugar but as @msbabyella points out, it is still sugar. We prefer this as a natural sugar over the processed white sugar. If you don’t like your drinks sweet start with a small amount of agave and then you can always add more later!

    Why ice for drinks should be use in blender the speeds will create energy in the form of heat. And nobody wants a warm drink. I even add ice to my protein milkshakes.

    The use if the milks are good and all. The doesn't it much sadly and it's fairly prices. You can do these at home of curse. You easily buy plastic lids that are great for fans. I highly suggest you get them for items if uing over 24 hours, stick to what it says which will either 2 or 3 days. Now you could freeze it by putting it in high quality freezer bag for longer.

      Thank you so much for your excellent question! The wok I am using is a 14 inch carbon steel wok with a wooden handle. This is, very specifically, my wok of choice because it heats quickly due to the thin metal, and also cools quickly for the same reason. In other words, it offers superior control. The best place to find a wok like this is to simply walk into your local Asian grocery store and handle a few of the woks that they have available. Stay away from anything with a nonstick coating, or anything made from aluminum, which tends to be very thick and heavy. The wok in the video cost me $15 about two years ago. You should be able to find a great wok for $20 or less!

    I call BS on this, as he is using a commercial stove top that cooks way hotter than any home cook top!!!

      Hi @logi1015, thank you for watching and thanks for the comment! The stove I am using is made by Garland, model RPB36-6BSS. Therefore, you are right, it is in fact, a commercial stove! However, this particular stove was manufactured in between the time that Garland created commercial stoves for homes and another company called Blues Star took over the home/commercial line of ranges a few years later. The burner that you see me using in the video is called the Large Open Top burner, and there are two of them on this particular range. The BTU output of this burner is 18,000, which is higher BTU output that you might find on a household range, which normally goes up to about 12,000 BTU. However, for those that have a Blue Star range in their home, the large open top burners can get up to 25,000 BTU. I wish we had one of those! Have a great day and have fun cooking!
