Soft Tofu with Preserved Duck Egg

- Often called Century Eggs, 100 Year Eggs, or Thousand-Year Eggs, we'll show our recipe and technique for how to prepare and how to eat chilled tofu with preserved duck egg.
This is a typical appetizer or side dish with a dinner. The preserved duck egg is a misunderstood ingredient especially in the US, it's a traditional way of preserving and egg in china where you take seasoned mud, thickened with grass, and you coat the outside of the egg and let it cure.
The egg has a unique texture and color and introduces a whole new category of taste which in chinese is called Chiang, which roughly translates to "takes your breath away", try it and find out why.
Ingredients:
1 package Soft tofu
2 preserved duck eggs (it's worth finding the nicest available)
soy sauce
sesame oil
sesame seeds
scallions
white pepper
We always made this with scallion and cilantro.
That sounds incredible! We will have to try that.
