Fall baking and cozy vibes, I am content now. I find adding a couple of tablespoons of milk or cream to shortbread dough helps keep it from being dry.

I have a great shortbread recipie that mum and I swear by (using Australian/UK /European measurements) 250g butter, softened 1 cup icing sugar 1 cup cornflour 2 cups plain flour, sifted Cream butter and sugar until pale and fluffy, add in dry ingredients (I tend to mix in the cornflour by hand because it gets everywhere) Mum and I add chocolate chips right at the end, but the dough should come together into a solid ball. Bake at 160 degrees fan-force for around 10 minutes or until the edges are a nice golden colour. These are super crispy warm and then soften into a regular shortbread texture once cooled.
