    Some thoughts on why you would use Kveik: 1. Fast fermenter (but honestly, what's the rush? if you are a homebrewer you probably have too much beer lying around anyway) 2. Needs no temperature control to work (but if you want a certain character from the yeast you do need some temperature control) 3. Yeast character 4. Tradition. If you are making a traditional norwegian farmhouse beer (or "just an authentic farmhouse beer"), Kveik is what you want.

    I made *something* with coconut oil, revolting texture, had a pear and carrot in it, 5 gallons, tasted like sour pear juice, then i stuck lavander in it. There was a cup of barlymalt in it. Its not good.

    To the point and professional t young man, thanks! My simple wine was made without a water lock, wine yeast, germ-killer, wine yeast, damejeanne, hose.. happy with the result, not too high alcohol% due to little sugar and yeast, 6%-7% I believe (judging from my tipsiness) Much more work than you, having to rebottle etc, because of the thicker, opaque residue.

    Great video, I really rnjoy your kveik know-how. Unfortunately where I live I can only get Voss, but im looking into importing some other strains at the moment. Sorry for asking this under such an oldc video, but can you tell me, why you switched from a 67C mash to a 65C mash for your brews? Or has it changed again?

    Honey variety contributes a lot to the final taste of your mead. One way to get a bit of an idea of how your finished mead is to dissolve some honey in water and taste it. 1. Clover honey is light and is what a lot of people think of when they imagine the taste of honey (especially in the US). I would suggest using it melomels and ciders (fruit juice and honey meads) 2. Wildflower varies by region and time of year in flavor. It is good for a traditional mead, but you want some residual sweetness. 3. Orange blossom mead is one of the best for traditional meads but can be somewhat expensive. My suggestion is that instead of adding table sugar, use more honey so that it doesn't go as dry. 2.5 to 3 lbs of honey per gallon of must. Honey has some sugars that the yeast beasties cannot ferment and there should be some sweetness to it at the end. I make sack (higher alcohol) meads and tend to use four pounds of honey but at this level of sugar, it can take a long time and watching the batch to make sure it works well. The yeast I use is Nottingham Ale yeast but I came to your channel to check out the kviek yeast types.

    Darrell, you are working too hard man! A strong base (alkaline) cleaner with your hot water will destroy labels. Sodium bicarbonate works really well. Be liberal and soak overnight. The only thing I will add is that labels that are plastic or foil should ideally be stripped off before the soak. The base solution will take care of all the glue. The oxiclean route will work just as well (incidentally this usually contains sodium carbonate which is a stronger base than sodium bicarbonate - I'm pretty sure that is where the magic lies)

    Warning, campden tablets are a bacteriostatic, not a bacteriocidal. Once the tablets have been depleted, growth of your infection is possiblw full and well. Campden tablets can also interfere with yeast growth if added at the same time.

    I just bought of these. Plan on using it my current beer. Do you make a priming solution? Normally I mix my beer out of the fermenter with a sugar solution in a bottling bucket (3oz of sugar for about 3gallons of beer) then siphon from bucket into bottles. But if I’m using less sugar, that might not work for the mini keg

    My last few batches I've just left in the kettle. I mash and boil in the morning, latches on and plug the hole in the lid at flame out. Then I transfer and pitch the yeast in the evening. You'd be extremely unlucky to get any bugs in there in the short time frame the temperature is habital for them.

    I also have limited room, time and money, which is why I have simplified my brewing process as much as possible. I now do everything in my boil kettle (mash, boil and ferment). I also started using the no chill method by just leaving the wort to cool down overnight. It gets to pitching temp in less than 24 hours depending on room temperature, less if I blow a fan toward the kettle to dissipate the heat faster. The brew day ends up being much faster and less equipment to clean up. I also started low abv beers (less than 3%) which ends up being better for my health and wallet. I will try this Kveik yeast and hopefully get rid of my fermenting fridge. Thanks!

    Hi ,m8 just recently got into brewing, i am for the moment sticking with extract and some dry hopping. I've been watching in particular your videos about kveik and harvesting. In your video where you crop and bottom topping do you mix them together and then pitch ? If I finish one brew on the day and top and bottom crop and introduce into my next brew on the day , will it work or do I need to refrigerate first ? If you put the yeast in fridge when your going to use it , do you need too take it out to warm up before pitching or straight in? Sorry for all the questions, but your video excites me !! Enjoying your videos !

    Do you think they may have been an issue of the type of yeast you used? I made a ginger beer and used a wine yeast and it grossed me out to even drink it.

    They are great. I have been re-using the ones bought full online from breweries for a few years now as no supermarkets in my town have stocked them since covid regs started. Agree on the rubber part especially during warm weather and you did great getting the smallest part out without resorting to filling with water as most of us seem to have to. The main problem I am having is getting hold of the rubber type replacement bungs. So far I have found some that are plastic and in two parts rather than three and a bit more robust but less flexible. They seem very similar to the ones used by Warsteiner which I had a nightmare removing and ultimately wrecked in the process. I have fitted a plastic bung to a keg from a recent batch for another practice when that is matured in a few months. In the meantime I would love to see/hear how anybody has successfully removed a plastic type bung without damaging it or the keg.

      Just to add that local aldi have had some mini-kegs in this last christmas but the bungs in those were plastic.

      @@davidpestana5290 Not sure where you are located but if you mean the red/black bungsvents they come ready assembled but when refitting after use they separate for cleaning and snap back together. I don't think the different parts of the bungs are sold separately if that is what you mean. There are a few UK based online homebrew stores such as Get er brewed (NI), DIAH (South Yorks), B2B (Blackburn) or have been sold on ebay usually around market value. About £1 each or £10 for packs of 10. I assume they will be available in other countries and some physical home brew stores. Hope that helps.

    this is why I made a few meads for the first time trying it... one of my meads says it will be like 3 to 4% potential alc.... another of my meads potential alc will be around 14% and another mead 12% and another mead 10%... vastly differnt outcomes.

    I think I drank half a gallon the first two weeks after fermentation and then I drank the other half like a month later and it was much better. Interestingly the fresh pressed juice wasn’t as good as the cheap frozen concentrate which was cleaner and clearer and cheaper.

    Can I ask, does the beer only last 5 days from pouring the first pint, or 5 days from siphoning into the keg?

      Typically it’s after opening the keg and letting new air in. The beer should still keep after filling the keg

    Definitely can dry hop with Kveik. I made a great ( in my opinion) juicy hazy that was out of this world. Two things I thought kind of strange though, 1. It flocked really well, with no whirlfloc or cold crashing it came out clear. Although it still tasted like a really juicy hazy it just didn’t look like one. 2. It got better and better. I’ve normally found that such highly hopped beers will need to be consumed young, as the juiciness gives was to more bitterness over time. But the last one I had (about 3 months in a bottle) was the best. So that got me thinking, how good could it have gotten?
