Welcome to my channel! I am Duncan Lu, a TV cooking show finalist, cooking presenter, recipe writer and astute home cook of Vietnamese cuisine. I am a Vietnamese-Australian who enjoys food from all cultures around the world and aspire to share this passion with kids and young individuals in Australia.
I competed on Channel 7's Plate of Origin cooking show where I served Vietnamese home-style recipes to arguably three of Australia’s biggest food authorities, Matt Preston, Manu Feildel and Gary Mehigan.
I am now on a journey to promote Vietnamese home-cooking in Australia to empower everyday Australians with the knowledge they need to nourish their family with the flavours of the home-style food my mum fed me- a big warm hug of flavour and nostalgia.

great recipe but i was wondering about the salt and sugar in the soup mix....you dont mention adding it in method but i guess you do?
Hi, in most our recipes we always recommend to season to taste. The salt and sugar here is just that. It was added just before the garnish but you may find you don't need it or need more. Hope this helps.

my stock is a lot darker but dunc this recipe is so totally different to others... your others.. but this still looks delis.h... so I might do the mushies I did my broth on one night.. next night I will attempt the rest
so your recipe varies in each RUclips video and the card that is sent after purchase... Please keep it the same.. I made this tonight and after tasting during cooking ( the recipe and your different RUclips ) Im like nah needs some oomph.. I added a couple of punched garlic and this is after a good hour and half cooking.. then thought nah needs more fish sauce and anchovy salt your recipe on the card is all so different to online,. anyway I then added chilli flakes as we are chilli eating peep.s Broth turned out amazing but fish sauce amounts and salt and there was no sugar on the recipe to the broth but I did add coconut sugar lil by lil.. Get it right Dunc please .. lucky im a good cook
Whenever in doubt add more anchovy salt and/or fish sauce. Our recipes are a baseline as I often mention at the end to season to your taste. Sounds like you've done an incredible job...yum!

That's his recipe but not an authentic one even he's Vietnamese. If you happen to be in Vietnam taste the real one. I would not eat his soup. I am Vietnamese FYI.

Hi, great question. For vegan/vego pho yes. I personally find the char overpowering and does not complement the fresh veg flavours.
Ir looks delicious! I wanna try! - Sidenote: I heard that resting doesn't do anything to conserve juices and encourages carry-over cooking. Can you speak to that?
Resting does encourage carry over cooking, for chicken thighs I don't believe it matters too much when compared to a medium rare steak. I find if you take perfectly cooked chicken off the grill and cut into it it'll leak out meat juices and dry out 😐...unless you've overcooked it and the juices have already dissipated.

Hi Jacqui, of course you can. Sometimes I exclusively you chicken maryland only. The key is to have chicken on the bones as that's what will allow the savoury flavours in the sauce to develop.

I made this one with canned tomato sardine by following your recipe with cilantro and jalapeno and vietnamese carrot raddish pickle bought from banh mi store, turned out to be fulfilling lunch meal... this one does not need pate and mayo for regular banh mi cause sardine itself is already fatty fish...
