Mid June 2024 I drove to Spiez , Switzerland. Spiez is situated between hills and vineyards on Lake Thun in the most beautiful bay in Europe. Especially the castle of Spiez invited me to explore. Due to its location, the town is was the starting point for my excursions into the Bernese Oberland

This is a variation of the Downeast Maine Pumpkin Bread recipe. I added some sour cream instead of water and some more allspice seasoning. I also placed some toasted almond slivers (or use walnuts) on the bottom of the baking pan before baking. It tasted wonderful the next day! This is a whole wheat no-knead Bread (spelt or rye are optional.) The dough is stirred with the Danish dough whisk, rest for 17 to 22 hours or overnight, and baked at 500 F in the Dutch Oven.
