      You can use either in this situation. I had parchment paper but not wax paper, so I used it! But wax paper definitely works.

      I would scrape the mold off of the top and then keep in the fridge! You can still use as long as it doesn't smell "off".

      Use powder so you don't have to worry about mold ... if not, add optiphen preservative.

      Yes! The bright green starts to turn darker green/brown.

    One more question, could I just add white wine ( leftover Chardonnay) to plain white distilled vinegar and use that as my vinegar compound?

      Yes you could. Play with it and you can always add more vinegar if you feel like it needs a more acidic boost. You can also open up a bottle of wine and infuse the wine with the flowers before drinking!

    How much tincture do you use when needed? Thanks for a great video! I have a ton of cleavers in my yard right now, just starting to get little white blooms. Is that a good time to harvest? Also do you wash them first and remove roots? Thanks for any help!

      This is a great time to harvest! Thank you for reminding me to share about taking it. I'd put your tincture in a bottle with a dropper and take 1 dropperful 3 times a day {about 1mL} until your glands are not inflamed and you feel better. It's a PERFECT time to harvest. I just make sure any leaves and other debris is gone, but I don't wash. Usually there aren't too many roots as I pull it up, but if there are a few, I don't remove them. Keeping it easy!       You're welcome. Great question! I've never used a LEVO infusing machine before, although I really want to {on my wish list}! I do have a Magical Butter Machine. I've noticed with that one that the tinctures and oils come out not as dark or as strong as herbs that have had time to sit and slowly infuse, the old fashioned way. If I do end up getting a LEVO, I'll let you know what I think!

      @@wildgardenfarms I live in Kingston Ontario Canada where we have 4 seasons. We have cold winters and also most of the spring is rainy or very warm. Summer can be really hot and humid. Fall usually lasts until November and then the temperatures get colder. It's been a very unusual winter this year. Warm and rainy. Had a blizzard for two days before Christmas and then warmed up to 8 degrees Celsius, so all the snow melted. Weird.

      @@lolasimmons9152 Ok, great! I would recommend starting with lemon balm, peppermint, and thyme/oregano/rosemary/sage. These simple culinary herbs are SO POWERFUL. Some holy basil (tulsi) would be amazing as well! These you can easily start from seed or buy some plant starts at a farmer's market.

      I would love fresh, but sometimes it's a bit hard to find. So the fermented in a jar works just great!
