  • Instant Pot Southern Collard Greens is a quick and easy electric pressure cooker recipe seasoned with smoked turkey. You can also use mustard or turnip greens. These collards can be cooked with bacon, ham hocks, country ham, or vegetarian without any meat. Add in a little vinegar if preferred.

    I can fit up to 3 pounds in the 6 quart Instant Pot. You will have to let the greens wilt on the saute function before pressure cooking, in order to get them all to fit.
    If you have an 8 quart pot, you can do the math on the max fit, taking into account 3 pounds fits in 6 quarts.
    If you double the recipe, double the ingredients. I would start with 1.5 pounds of smoked turkey, up to 2.5 pounds.
    Ingredients
    1 tablespoon olive oil
    1 cup chopped white onion
    2 garlic cloves, minced
    1 pound collard greens trimmed and washed
    1 smoked turkey leg or turkey wing (about 1 pound to 1 1/2 pounds) fully cooked, You can find turkey legs and wings at most grocers. You can also use ham hocks if you wish.
    1 1/2 cups chicken broth
    1/2 tablespoon Creole Seasoning
    Instructions
    Place the Instant Pot on the Sauté function. Add the olive oil and onions to the pot.
    Cook for 2-3 minutes until translucent and fragrant. Add the garlic or the pot and stir.
    Next, add half of the collard greens to the pot. Layer in the turkey leg and add the remaining greens to the pot. Don’t worry the greens will wilt down a ton.
    Add the chicken broth and Creole seasoning.
    Place the lid on the pot and seal.
    Cook for 25 minutes on Manual, High Pressure Cooking.
    When the pot indicates it has finished, quick release the steam.
    Open the pot and remove the turkey. Shred the meat from the bone and return the meat to the pot.
    Stir to combine and serve.

    Listen...Brandi has been my go to for recipes for a minute now. I have followed her method to the tee and our greens turned out perfect each and every time! This dish is super quick and simple and perfect for freezing to eat at a later time!

    I have found that pork necks give the best flavor/texture profile for me. I don't understand using bacon when it's going to be all limp.

    Just picked some collard greens out of my garden. The greens are perfect brilliant green, without any insect damage. I usually pressure cook them on the stove but using the instant pot my daughter gave me today.

    Ty so much for this video! These are so good!!! I've made them twice in the last month...but the smoked turkey leg is ridiculously tough. I have to use kitchen scissors, ugh.
    Does this happen to anyone else?

    Great video for collards but if you cook mustard greens for 25 minutes they are so tender they will disintegrate. I just soak a bunch of picked, chopped collards in water and white vinegar for about 15 minutes and they are clean. Those bagged greens are easier but they make me mad with all the stems and so little actual greens. Cheers!

      Thanks. I see everyone cooking "greens" from 5-30 minutes in the pressure cookers. But not all greens have the same hardiness. I've always just used collard's, but picked up a couple of the pre chopped mustard greens. I'll probably shoot for about 15 minutes.

    I love using the Better than Bouillon broth. Swanson’s broth isn’t as flavorful.

    I do this recipe in a regular pot or even a frying pan and I use the same recipe for all bitter greens: organic virgin coconut oil or avocado oil to saute greens in. Olive oil has too low a smoke point which is why I don't use it. Add in other veggies as desired like peppers, mushrooms, broccoli, cauliflower. Flavor with a good shot of hot sauce, a couple squirts of organic lemon juice, salt and pepper.

      Frying pan? Are you talking soul food greens? Or just that you saute them?

      @@staysnatched I'm talking about the fact that I don't have an Instant Pot. I don't know what soul food greens are. I use any bitter green like spinach, Swiss chard, arugula, escarole, Brussels sprouts, collard greens, etc.

      @@59skupe gotcha. Soul food greens are what these are. You don’t use a frying pan even if not using the Instant Pot.

      Sounds nasty
