    We always drank the sauce as you called it in a tea cup with some corn bread on the side. We dunked the corn bread in it. We called it pot likker. It's really good for you. Lots of nutrients in that pot likker. YUM!

    Another great video, thank you! I always add a little sugar to mine, and just a tiny pinch of red pepper flakes. When making on the stove, I Saute bacon, then remove and saute the onion and ham hocks together in the bacon grease. Let those braise in broth, vinegar, red pepper flakes and small amount of sugar for a bit before adding the greens to infuse the pot liquor with the smoky ham hock juices. I haven't tried it in my ninja yet, but you've inspired me to now! I love your videos and ideas Louise, please keep em coming!

    I made it! Twice.. one with ham hock, the other with smoked turkey.. both delicious 😋. Will make this on a weekly basis as I love it so much... thanks Louise.

    In the spring my Mom would pick Polk greens and mix them with collard greens or mustard greens .. delicious 😋
    She would cook the Polk greens and rinse, like 5 times !! Then mix with the other greens 🥬
    She would use vinegar and just a pinch of sugar in her greens and of course ham hawk…

    Thank you. My first successful greens. Had my sister try them because she makes them for all holiday gatherings. She said they are good. I may not get to show off during covid but one day watch out it is going to be a greens cook off. You are my favorite food coach. Thank you Thank you

    Instead of ham hock I like to use a heaping handful of leftover shredded smoked pulled pork! Simply Amazing!

    I'm in SC and I have never heard of onion and garlic in collards but yours sure look delicious. Also, sincere they can be a tad bit bitter, I add sugar if needed. In my area of SC, we have collards on top of rice. I know a little strange, but that's the way we like them.

    Ok so if greens are pulled late or sat long in store, so not as fresh-they are tough and needed a lil more cooking time. So wonderful- we added some heat with cayenne peppers- so good. Love my potlikker! See previous comments Love your recipes, tips, how to’s and style! Thank you!

    My southern LA and MS family refers to the juice from greens as “pot liquor” and she be eaten with cornbread

      Same in Alabama. I also like to crumble cornbread into black eyed peas.

    Ive sent so many friends to your page. Thanks for all the advice with the ninja foodi. I was terrified to use it the first time. So far so good. Only overcooked 3 things out of about 40 now. Dehydrate and yogurt settings I have not tried yet but hopefully soon. I've tried several of your recipes following the videos. My bf approves!! Thanks for sharing this with all of us!!

    Mmmm...better than sauce. Pot liquor (in the South "potlikker") is amazingly nutritious and should not be tossed. So many uses, including soup stocks, gravies, and basting/dipping meat/seafood....even enjoy it as a warm tonic beverage!

      You could sauté them for a few minutes to get them to reduce in volume and you'd be able to fit more in the pot. I'm thrilled you are enjoying the videos and recipes!

    Wash your collards with baking soda and white vinegar removes all the dirt.Then rinse them a second time.

    I have never tasted Collard Greens so I don't know if I would like it. That makes a lot so can I cut this recipe down? Like way down to just try it?
    I have always wanted to try it, but just never had the opportunity. Also, if it turns out I hate Collard Greens, could I substitute something else like maybe spinach? I do love spinach.

      Absolutely, you can use as few collard greens as you like, the time will be the same. Spinach cooks much faster, so to make this with spinach, I would not pressure cook. Just use the sear/ sauté until the spinach is wilted.

      Where is the seasoning? Creole, cayenne pepper, garlic? And a pinch of sugar to cut bitterness
