    That looks great. I do it similar but with bacon and with a lot (but not all) of the fat taken out.
    I'm not a fan of crispy fried pierogies. I want them to soak up the grease (after they have been boiled) and that's about it. Yours don't look fried crisp, I want them soft which goes back to my Fin Granny (dad's side) who would make homemade pierogies. Eventually so did my mom. She would make them, they would use a glass to cut the dough ome at a time, fill them with potato and cheese mixture (trust me I have looked for the recipe, can't find it), boil them, throw them in a roasting pan, smother them in salt pork, fat and all (there was way too much grease to be honest, my only critique) and sauted onions, and bake them slightly.
    I know pierogies. The only frozen perogies I will eat are from a Canadian company called Pellman. Those are the only frozen store bought perogies that come close. Cheemo sucks, M&M Meats sucks, they all suck badly. Except Pellman. I really should just go find some made by some old ladies at the Ukrainian Center or something like that on special occasions. Pellman will do.
